Feed restriction and quality carcass in swine / Restrição alimentar e qualidade de carcaça em suínos

ABSTRACT

The demand of the market for carcasses of swine with more meat and less fat has been addressing the search for races and the selection of more specialized lineages in the production of thin meat. Other fields of the animal production have also been developed in the sense of providing the obtaining of swine with larger proportion of thin meat. Besides the genetic capacity for production of thin meat, other factors interfere in the quality of the swine carcass, be them mainly the sexual category, the alive weight, the environmental conditions and the energy density of the ration. The feed restriction, or by other words, the control of the intake (mainly of energy) of the animal can be a tool for obtaining swine carcasses of better quality. The knowledge of the pattern of tecidual deposition for the animal, mainly during their growth and finishing phases (±30 kg until the slaughter), is vital for the maximization of production and obtaining of good carcasses.

RESUMO

A exigência do mercado por carcaças de suínos com mais carne e menos gordura tem direcionado a busca por raças e a seleção de linhagens mais especializadas na produção de carne magra. Outros campos da produção animal também têm evoluído no sentido de proporcionar a obtenção de suínos com maior proporção de carne magra. Além da capacidade genética para produção de carne magra, outros fatores interferem na qualidade da carcaça suína, sejam eles principalmente a categoria sexual, o peso vivo, as condições ambientais e a densidade energética da ração. A restrição alimentar, ou seja, o controle do consumo (principalmente de energia) do animal pode constituir-se em ferramenta para a obtenção de carcaças suínas de melhor qualidade. O conhecimento do padrão de deposição tecidual pelo animal, principalmente durante suas fases de crescimento e terminação (±30 kg até o abate), é vital para a maximização da produção e obten- ção de boas carcaças.
