Conformidades no recebimento e no armazenamento de alimentos em escolas municipais de Itaqui ­ RS / Conformities in receiving and storing food in municipal schools in Itaqui - RS

RESUMO

O objetivo deste trabalho foi avaliar as condições higiênicas das etapas de recebimento e armazenamento de alimentos nas cozinhas das escolas públicas municipais de Itaqui - RS. As ferramentas utilizadas foram listas de verificação de boas práticas, planilhas de controle de temperatura de refrigeradores e freezers e de alimentos vencidos. Os dados foram coletados durante as nove visitas realizadas em cada uma das 12 escolas municipais ­ seis de ensino fundamental (EMEFs) e seis de educação infantil (EMEIs). Foi observado um aumento no percentual de conformidades, de 24,92% para 30,37%, entre a primeira e a última aplicação da lista de verificação. Houve melhorias no recebimento de alimentos nas EMEFs e no armazenamento tanto nas EMEIs quanto nas EMEFs, entretanto, não houve alteração na classificação das escolas, que permaneceram como risco sanitário alto. As temperaturas dos equipamentos e alimentos refrigerados estavam acima do padrão exigido pela legislação. Os resultados demonstram que a alimentação oferecida aos estudantes apresenta risco sanitário. É necessário que os atores envolvidos na alimentação escolar trabalhem pela adequação higienicossanitária da produção de alimentos.

ABSTRACT

The objective of this study was to evaluate the hygienic conditions of receiving and storage food in the kitchens of municipal schools from Itaqui-RS. For the evaluation were used checklists of good practices, control spreadsheets coolers and freezers temperatures and expired food. Data were collected during nine visits in each of the 12 municipal schools - six primary (EMEF) and six preschool (EMEI). There was increase of percentage of conformities from 24.92% to 30.37% between the first and the last evaluation. There have been improvements in the reception of food in EMEFs and storage both in EMEIs as in EMEFs, however, the classification of schools has not changed, remaining with high sanitary risk. The temperatures of refrigeration equipment were above the standard required by law. The results show that there is no safe required for the quality of school meals in the city. It is necessary that those involved with the school meal work together to improve them.
