ABSTRACT
Sterols were identified in ten samples of Syrian virgin olive oil, which obtained from Olive Mill distributed to different places in Syria, using a gas chromatography according to the method adopted by the International Council of olive oil. The study concluded the development fingerprint for Syrian olive oil reflected by the following Parameters: delta 7- Stigmasterol = 0.8%, beta-Sitosterol >/= 93%, Campesterol = 4.0%, Stigmastadiene = 0.15%
