SUMMARY OBJECTIVE: The aim of this study was to evaluate the consumption of ultra-processed foods by Brazilian pregnant women and its association with the nutritional quality of the diet. METHODS: This is a prospective and cross-sectional study with food consumption data of Brazilian pregnant women from the 2017 to 2018 Family Budgets Survey (Pesquisa de Orçamentos Familiares). Food consumption was measured using two 24-h food recalls, and the foods were categorized according to the NOVA classification. The averages of absolute and relative energy consumption for each of the NOVA groups and subgroups were estimated. The sociodemographic characteristics described the diet's caloric contribution of ultra-processed and non-ultra-processed food fractions. Linear regression models were used to describe the association between quintiles of the caloric contribution of ultra-processed foods and the average content of nutrients in the diet. RESULTS: Consumption of ultra-processed foods represented 20.9% of the total calories in the diet of Brazilian pregnant women. There was a higher energy contribution of ultra-processed foods in the diet of pregnant women living in urban areas (22%), with higher per capita income (23.7%), and in the south region of the country (26.9%). In addition, the data showed an association between higher consumption of ultra-processed foods with reduced intake of protein, carbohydrate, fiber, potassium, iron, zinc, and folate and increased intake of total fat, saturated fat, trans fat, and free sugar. CONCLUSION: Results show that higher consumption of ultra-processed foods is associated with a reduction in the nutritional quality of the diet of Brazilian pregnant women.

ABSTRACT

Food processing is a way of life in India. It has been practiced for ages. Simple, home-based techniques, such as fermentation, have resulted in the creation of our famous pickles, papada, chutneys and murabbas that excite both the elite and the masses across the world. The sector constituted as much as 9.17per cent and 11.08 per cent of Gross Value Added (GVA) in manufacturing and agriculture sector respectively in 2017-18. Despite its low capital intensity, food processing sector has the largest number of factories and engages largest number of persons as compared to other industrial sectors in the country, rural sector is the pulse of our country, being agriculture and farmer based economy, and is linked with the continued progression of the nation. The government has initiated several steps on the path of success of becoming a five trillion dollars economy by refocusing its efforts to uplift the rural sector. With the emerging crisis of COVID-19 and projected economic depression across the globe, rural economy is sure to emerge as the lifeline for the country. In India, agriculture is the prime sector of boosting the rural economy and rural employment. Rural economy constitutes nearly 47 per cent of the national income. The “Aatmanibhar Abhiyan” announced by the Central Government and the concrete steps being taken up towards the returnee migrants, shall be instrumental to enhancing the agriculture sector. Thus, development of agro-based industries plays a significant role in the process of economic development in the country as a whole made an attempt to review the relevant literature pertaining to the study of food processing industry in India as well as in other country

Introdução: O processamento de alimentos orgânicos por pequenos produtores contribui para um sistema alimentar economicamente, socialmente e ambientalmente sustentável. É importante conhecer o perfil e as potenciais dificuldades dos processadores de alimentos orgânicos, organizados sob a modalidade do Sistema Participativo de Garantia da qualidade orgânica, devido ao seu crescimento e relevância social, para direcionamento de ações e políticas públicas com consequente fortalecimento da agricultura de bases agroecológica. Objetivo: Descrever o perfil dos processadores de alimentos orgânicos do estado do Rio de Janeiro e identificar os principais desafios nas redes de produção e comercialização. Método: Estudo exploratório e descritivo com delineamento transversal realizado por pesquisa documental aos planos de manejos, manual de boas práticas, atas do Sistema Participativo de Garantia, certificados  emitidos pela Associação de Agricultores Biológicos do Estado do Rio de Janeiro, assim como outros documentos de atualização de Organismos Participativos de Avaliação da Conformidade Orgânica em relação aos produtores credenciados. Resultados: Observou-se que 60% dos processadores orgânicos no estado do Rio de Janeiro são vinculados ao Sistema Participativo de Garantia da qualidade orgânica. A unidade de processamento mais utilizada é a anexa ao domicílio. A maioria são agricultores ou microempreendedores familiares que recebem ajuda da família no processo produtivo e a atividade mais desenvolvida é a fabricação de conservas, geleias, molhos e doces. Menos de 70% possuíam alvará de funcionamento e licença sanitária, 97% tinham plano de manejo orgânico; 79% possuíam manual de boas práticas e 78%, plano de rastreabilidade. Das principais dificuldades, destacam-se: aquisição de matéria-prima, adequação às normas sanitárias e logística de distribuição. Conclusões: O estudo desvelou a potencialidade do processamento de produtos orgânicos para o desenvolvimento socioeconômico regional e a necessidade de mais incentivos para viabilizar a inclusão produtiva de pequenos empreendimentos.


Introduction: Smallholder organic food processing contributes to an economically, socially and environmentally sustainable food system. It is important to know the profile and potential difficulties of organic food processors, organized under the modality of the Participatory Organic Quality Assurance System, due to its growth and social relevance for targeting actions and public policies with the consequent strengthening of agriculture with an agroecological basis. Objective: Describe the profile of organic food processors in Rio de Janeiro state and identify the main challenges in the production and commercialization schemes. Method: This is an exploratory and descriptive study with transversal design developed by documental research of different documents: handling plans, good practices manual, minutes of the Participatory Organic Quality Assurance System, certificates issued by the Association of Biological Farmers of the State of Rio de Janeiro, and other updated documents of the Participative Organism of Organic Conformity Assessment related to the accredited producers. Results: Sixty per cent of the organic processors in the Rio de Janeiro state were linked to the Participatory Organic Quality Assurance System. The processing unit mostly used is the one attached to their homes. Most of them are farmers or family micro-entrepreneurs that have assistance of family members in the production process and the main activity carried out is the production of canned foods, jams, sauces, and homemade desserts. Less than 70% of the producers had an operation permit and sanitary license, 97% had an Organic Handling Plan; 79% had a Good Practices Manual and 78% had a Traceability Plan. Among the main difficulties, there were: raw resource acquisition, sanitary rules adequacy and logistics in supplies. Conclusions: The study demonstrated the potentiality of organic products processing for the local social and economic development, and the need of greater inducements to make an inclusive production of small enterprises feasible.

ABSTRACT

Objective:To observe the epidemiological characteristics and transmission chain of COVID-19 in Harbin, and to provide epidemiological evidence for improving the COVID-19 preventive measures and optimizing prevention and control strategies.Methods:The epidemic situation of COVID-19 in Harbin in January 2021 was analyzed by using the Infectious Disease Report Information Management System and the Public Health Emergency Management Information System of the China Disease Prevention and Control Information System, the epidemic situation information publicly released by the Heilongjiang Provincial Health Commission, and the epidemiological report of Heilongjiang Province Certer for Disease Control and Prevention and Harbin Center for Disease Control and Prevention. The main transmission chains were sorted out through combination of epidemiological field investigation, serological testing, gene sequencing, big data and other means.Results:From January 12 to February 4, 2021, 295 cases of COVID-19 infection (including confirmed cases and asymptomatic infections) were reported in Harbin, which affected 6 districts of Harbin and were concentrated in 41 of the 274 townships in the city. The sex ratio of male to female was 1.00∶1.12 (139∶156); the age ranged from 1 to 86 years old, and the median age was 45 years old. The proportion of confirmed cases and asymptomatic infection was 1.00 ∶ 1.02 (146 ∶ 149), and there was a significant difference in the distribution of different ages between them ( P = 0.042). The cases were mainly found through the health screening of the centralized isolation personnel (178 cases, 60.3%). Other detection methods included active screening (87 cases, 29.5%), screening of the home isolation personnel (26 cases, 8.8%), and medical treatment in medical institutions (4 cases, 1.4%). The main transmission chain of the outbreak was the case associated with a food processing enterprise, with a total of 259 cases, accounting for 87.8% of the total cases. The gene sequencing results showed that the case sequence was homologous with that of Wangkui County, Suihua City, Heilongjiang Province. Conclusions:A food processing enterprise is involved in the main transmission chain, which indicates that the epidemic prevention and control measures needs to be further optimized. Specifically, the supervision and management of food processing enterprises, cold chain storage companies and other enterprises should be strengthened. High attention should be paid to the hidden dangers of COVID-19 in large and medium sized enterprises with hermetic space in Harbin.

ABSTRACT Objective To characterize food consumption, considering the degree of industrial food processing by public schools' adolescents. Methods Cross-sectional study involving adolescents aged 14 to 19 years, of both genders, attending public schools in Juiz de Fora, MG. Food consumption was assessed using two 24-hour dietary recalls. Foods were classified into three groups according to the degree of industrial processing: (1) unprocessed foods or minimally processed foods, culinary ingredients and preparations based on these foods; (2) processed foods; (3) ultra-processed foods. In addition, weight and height information was collected, with subsequent calculation of body mass index/age to assess the individuals' nutritional status according to the gender. Pearson's chi-square, Mann-Whitney and Kruskal-Wallis tests were performed, adopting a value of p<0.05. Results The sample consisted of 804 adolescents, with a predominance of females (57.5%). In the sample, 29.9% and 26.1%, of girls and boys, respectively, were overweight. There was a difference in the daily consumption of ready-made sweet-tasting foods, being higher in females (26.2%) when compared to males (18.1%), whereas the consumption of soft drinks (one to four times a week) was 47.2% and 55.6% in girls and boys, respectively (p<0.05). Higher consumption of ultra-processed foods was observed in females (p=0.02) and processed foods in males (p=0.008). Conclusion There was a high contribution of ultra-processed foods in the diet of adolescents in public schools; a high prevalence of overweight was observed in both genders.


RESUMO Objetivo Caracterizar o consumo alimentar através do grau de processamento industrial dos alimentos consumidos por adolescentes matriculados em escolas públicas. Métodos Estudo transversal com adolescentes de 14 a 19 anos de ambos os sexos matriculados em escolas públicas de Juiz de Fora, MG. O consumo alimentar foi avaliado através de dois recordatórios de 24h. Os alimentos foram classificados em três grupos de acordo com o grau de processamento industrial: (1) alimentos in natura ou minimamente processados, ingredientes culinários e preparações a base desses alimentos; (2) alimentos processados; (3) alimentos ultraprocessados. Ademais, foram coletadas informações de peso e altura dos estudantes, com posterior cálculo de índice de massa corporal/idade para avaliação do estado nutricional conforme o sexo. Foram realizados os testes Qui-quadrado de Pearson, Mann-Whitney e Kruskal-Wallis, adotando o valor de p<0,05. Resultados A amostra foi composta por 804 adolescentes, com predomínio do sexo feminino (57,5%). Entre os adolescentes, 29,9% das meninas e 26,1% dos meninos apresentaram excesso de peso. Observou-se diferença no consumo diário de alimentos prontos de sabor doce, sendo maior no sexo feminino (26,2%) quando comparado ao masculino (18,1%), ao passo que o consumo de refrigerantes de uma a quatro vezes na semana foi de 47,2% e 55,6% nas meninas e meninos, respectivamente (p<0,05). Maior consumo de alimentos ultraprocessados foi observado no sexo feminino (p=0,02) e de alimentos processados no sexo masculino (p=0,008). Conclusão Verificou-se elevada contribuição proveniente do grupo dos alimentos ultraprocessados na dieta dos adolescentes de escolas públicas, com altas prevalências de excesso de peso em ambos os sexos.

ABSTRACT Objective To investigate the contribution of ultra-processed food to the nutritional dietary profile of school feeding in public child day-care centers. Methods Cross-sectional study carried out from June-November/2013. Samples from six daily meals were collected in twenty non-consecutive days. A total of 117 school meals (123 food items) were offered to children from 12-36 months of age. The served portions were determined by direct weighting. Physicochemical analyses were performed to establish the nutritional composition. School meals were classified according to the processing degree: (A) unprocessed/minimally processed/culinary preparations, (B) processed food, or (C) ultra-processed food. The contribution of each group to the quantity of energy, macronutrients and sodium was calculated. Student's t test was applied for comparison between groups. Results Ultra-processed meals contributed to 45.8% of energy, 33.9% of lipids, 42.8% of proteins, 48.9% of carbohydrates, and 20.9% of sodium. All lunches and 90% of dinners were classified as unprocessed/minimally processed/culinary preparations. 39.0% of the meals were ultra-processed (mainly breakfast and snacks). Ultra-processed meals had a greater quantity of energy (p=0.026) and carbohydrates (p<0.001) per serving, while unprocessed/minimally processed/culinary preparations offered more sodium per serving (p<0.001). Conclusion Although most meals were classified as unprocessed/minimally processed/culinary preparations, ultra-processed food, which should be avoided at this stage of life, are offered daily, contributing with higher energy and carbohydrates offer per serving. The municipality need to improve the quality of the meals offered to children in these child day-care centers, observing the new Resolution nº 6/2020 that came into effect in 2021.


RESUMO Objetivo Investigar a contribuição de alimentos ultraprocessados no perfil nutricional da alimentação escolar ofertada em Centros Municipais de Educação Infantil. Métodos Estudo seccional conduzido entre junho e novembro/2013. Amostras das seis refeições diárias foram coletadas durante 20 dias não consecutivos. Cento e dezessete refeições (123 itens alimentares) foram ofertadas a crianças de 12 a 36 meses. O tamanho das porções foi determinado por pesagem direta e a composição nutricional, por análises físico-químicas. As refeições escolares foram classificadas de acordo com o grau de processamento: (A) in natura/minimamente processados/preparações culinárias; (B) processados; (C) ultraprocessados. Foi calculada a contribuição de cada grupo para energia, macronutrientes e sódio. O Teste t foi utilizado para comparação entre os grupos. Resultados As refeições ultraprocessadas contribuíram com 45,8% de energia, 33,9% de lipídios, 42,8% de proteínas, 48,9% dos carboidratos e 20,9% do sódio ofertados. Todos os almoços e 90% dos jantares foram classificados como in natura/minimamente processados/preparações culinárias. 39,0% das refeições foram classificadas como ultraprocessadas (principalmente café da manhã e lanches). Refeições ultraprocessadas ofereceram maior quantidade de energia (p=0,026) e carboidratos (p<0,001) por porção, enquanto refeições in natura/minimamente processados/preparações culinárias forneceram mais sódio por porção (p<0,001). Conclusão Apesar da predominância de refeições in natura/minimamente processados/preparações culinárias, os alimentos ultraprocessados - que deveriam ser evitados nessa fase da vida, são ofertados diariamente, contribuindo com maior quantidade de energia e carboidratos por porção. É necessário que o município reavalie as refeições ofertadas às crianças nesses Centros de Educação Infantil, seguindo as recomendações atuais da Resolução nº 6/2020, que entrou em vigor em 2021.

ABSTRACT Objective To describe the development and update of an instrument for food categorisation according to the extension and purpose of industrial processing, and to test its practical application. Methods After updating the instrument based on a recent publication on the NOVA classification, it was applied by five researchers to a database of 108 food items. These items are part of a database of foods announced in the health-related sections of supermarket promotional circulars. The Cohen's weighted kappa coefficient was calculated to determine intra-rater agreement; Fleiss' kappa and Kendall's coefficient were applied to determine inter-rater agreement. Results In the updated version, two classes of additives and eight substances considered by the most recent publication as specific to ultra-processed foods were added. The intra-rater agreement was 100% (p<0.001), indicating an "almost perfect" agreement; Fleiss' agreement among all raters ranged from 74% to 97% (p<0.001), which represents an agreement that ranged from "strong" to "almost perfect"; Kendall's W was higher than 0.93 (p<0.001) among all raters. Conclusion The updated instrument showed high agreement and proved to be a methodologically sound and applicable tool for the purpose of classifying foods by the extension and purpose of industrial processing.


RESUMO Objetivo Descrever o desenvolvimento e atualização de um instrumento para categorização dos alimentos de acordo com a extensão e propósito de seu processamento industrial e avaliar sua aplicação prática. Métodos Após a atualização do instrumento com base em publicação recente sobre o tema, ele foi aplicado por cinco pesquisadores em um banco de dados de 108 alimentos. Esses alimentos são parte de um banco de dados de alimentos anunciados em seções relacionadas à saúde de panfletos promocionais de supermercado. Para avaliar a concordância intra-avaliador foi calculado o kappa ponderado de Cohen e para a concordância interavaliadores foram calculados o kappa de Fleiss e o coeficiente de concordância de Kendall. Resultados Na versão atualizada foram adicionadas duas classes de aditivos e oito substâncias, consideradas pela publicação mais recente como específicas de alimentos ultraprocessados. A concordância intra-avaliador foi de 100% (p<0,001), o que indica uma concordância "quase perfeita"; a concordância de Fleiss entre todos os avaliadores variou de 74% a 97% (p<0,001), o que representa uma concordância que variou de "forte" a "quase perfeita"; a concordância de Kendall foi W >0,93 (p<0,001) entre todos os avaliadores. Conclusão O instrumento atualizado apresentou uma elevada concordância e mostrou-se uma ferramenta metodologicamente útil e aplicável quando se tem por objetivo classificar alimentos pela extensão e propósito do processamento industrial.

Introdução: O atual modelo globalizado de produção de alimentos acarreta homogeneização na alimentação, com diminuição no consumo de alimentos in natura e grande participação de ultraprocessados. Objetivo: Investigar os fatores associados ao consumo alimentar de adultos, considerando os níveis de processamento de alimentos. Métodos: Estudo transversal com adultos no estado de Pernambuco que avaliou o consumo alimentar e variáveis socioeconômicas, demográficas, segurança alimentar e outras relacionadas ao modo e prática de aquisição de alimentos. Foi utilizado questionário de frequência alimentar para investigação do consumo, com divisão dos alimentos conforme o nível de processamento, com posterior análise através de escores. Avaliou-se a associação entre consumo alimentar e variáveis explicativas através dos testes "U" de Mann Whitney e Kruskal Wallis, com aplicação, neste último caso, do teste "U" de Mann Whitney a posteriori. Foram consideradas estatisticamente significantes associações com valor de p<0,05. Resultados: Foram entrevistados 1.066 adultos, cuja maioria possuía baixa escolaridade, baixa renda, com participação em programa de transferência de renda e em situação de insegurança alimentar. Essas variáveis mostraram associação com o consumo de determinados grupos alimentares. Também foram observadas diferenças no consumo conforme características como local de moradia, sexo, faixa etária, modo de aquisição de alimentos, local de compra e hábito de leitura do rótulo. Conclusões: Diante do contexto globalizado de estímulo aos industrializados, aspectos como gênero, condições econômicas, local de moradia, ambiente e práticas de compra de alimentos podem se mostrar como protetores para maior consumo de alimentos minimamente processados ou de risco para o consumo de ultraprocessados.


Introduction: The current globalized model of food production leads to the homogenization of diet, with a reduction in the consumption of unprocessed foods and the considerable participation of ultra-processed foods. Objective: Investigate factors associated with food consumption among adults considering the degree of food processing. Methods: A cross-sectional study was conducted with adults in the state of Pernambuco involving the assessment of food consumption. Data were also collected on sociodemographic characteristics, food insecurity and aspects related to food acquisition. A food frequency questionnaire was used to investigate food intake, with the categorization of foods according to the degree of processing and the subsequent analysis of consumption scores. Associations between food consumption and explanatory variables were evaluated using the Mann-Whitney U test and Kruskal- Wallis test, the latter of which was complemented with the post hoc Mann-Whitney U test. Associations with a p-value <0.05 were considered statistically significant. Results: One thousand sixty-six adults were interviewed. Most had a low level of schooling and low income, were beneficiaries of the income transfer program and were in a situation of food insecurity. These variables were associated with the consumption of particular food groups. Differences in consumption were found according to place of residence, sex, age group, mode of food acquisition, place of purchase and the habit of reading food labels. Conclusions: In the globalized context that stimulates the consumption of industrialized foods, aspects such as sex, economic status, place of residence and food purchasing environment and practices can serve as protective factors that ensure the greater consumption of minimally processed foods or risk factors for the consumption of ultra-processed foods products.

ABSTRACT

O Guia Alimentar para a População Brasileira é reconhecido como um potente indutor de políticas públicas de alimentação e nutrição. Nessa perspectiva, este artigo apresenta o percurso metodológico e as evidências que subsidiaram a elaboração dos novos parâmetros de aquisição de alimentos do Programa Nacional de Alimentação Escolar (PNAE). Tal elaboração envolveu as análises de: (1) participação dos recursos federais utilizados para compra de alimentos, agrupados segundo a classificação NOVA, empregada no Guia Alimentar para a População Brasileira, pelo conjunto de municípios brasileiros e segundo classificação da execução (positiva ou negativa); (2) cardápios mensais de referência que foram elaborados seguindo recomendações do Guia Alimentar para a População Brasileira; (3) aquisição de alimentos por amostra de 525 municípios, envolvendo a participação relativa dos grupos de alimentos (segundo a NOVA) no total de gastos e de energia e a qualidade nutricional dos alimentos adquiridos; e (4) alimentos ultraprocessados que não devem ser ofertados no ambiente escolar. Foi proposta a adoção dos seguintes parâmetros para participação dos grupos de alimentos em relação ao total de recursos federais empregados na compra de alimentos: ≥ 75% de recursos para alimentos in natura ou minimamente processados; < 20% para alimentos processados ou ultraprocessados e < 5% para ingredientes culinários processados e a ampliação da lista de alimentos cuja aquisição com recursos federais do PNAE é proibida. Esse processo subsidiou a elaboração da Resolução CD/FNDE nº 6, de 8 de maio de 2020, que dispõe sobre o atendimento da alimentação escolar aos alunos da educação básica no âmbito do PNAE.


La Guía Alimentaria para la Población Brasileña está reconocida como un potente inductor de políticas públicas de alimentación y nutrición. Desde esta perspectiva, este artículo presenta la trayectoria metodológica y evidencias que apoyaron la elaboración de los nuevos parámetros de adquisición de alimentos del Programa Nacional de Alimentación Escolar (PNAE). Tal elaboración implicó los análisis de: (1) participación de los recursos federales utilizados para la compra de alimentos, agrupados según la clasificación NOVA, empleada en el Guía Alimentaria para la Población Brasileña, por el conjunto de municipios brasileños, y según la clasificación de la ejecución (positiva o negativa); (2) menús mensuales de referencia que fueron elaborados siguiendo recomendaciones del Guía Alimentaria para la Población Brasileña; (3) adquisición de alimentos mediante una muestra de 525 municipios, implicando la participación relativa de los grupos de alimentos (según NOVA) en el total de gastos y de energía, así como la calidad nutricional de los alimentos adquiridos; y (4) alimentos ultraprocesados que no deben ser ofrecidos en el entorno escolar. Se propuso la adopción de los siguientes parámetros para la participación de los grupos de alimentos, en relación con el total de recursos federales empleados en la compra de alimentos: ≥ 75% de recursos para alimentos in natura o mínimamente procesados; < 20% para alimentos procesados o ultraprocesados, y < 5% para ingredientes culinarios procesados, así como la ampliación de la lista de alimentos, cuya adquisición con recursos federales del PNAE está prohibida. Este proceso apoyó la elaboración de la Resolución CD/FNDE nº 6, del 8 de mayo de 2020, que organiza la atención de la alimentación escolar a alumnos de educación básica en el ámbito del PNAE.


The Dietary Guidelines for the Brazilian Population is acknowledged as a powerful inducer of public food and nutrition policies. In this perspective, this article presents the methodological path and evidence that supported the elaboration of the new parameters of food acquisition of the Brazilian National School Feeding Program (PNAE). This elaboration involved the analyses of: (1) participation of federal resources used to purchase food, grouped according to the NOVA classification, used in Dietary Guidelines for the Brazilian Population, by the set of Brazilian municipalities and according to the classification of the execution (positive or negative); (2) monthly reference menus that were prepared following Dietary Guidelines for the Brazilian Population recommendations; (3) analysis of food acquisition by the sampling of 525 municipalities, involving the relative participation of food groups (according to NOVA) in total expenditures and energy and nutritional quality of purchased foods; and (4) analysis of ultra-processed foods that should not be offered in the school environment. We proposed the adoption of the following parameters for the participation of food groups in relation to the total federal resources used in the purchase of food: ≥ 75% of resources for fresh or minimally processed foods; < 20% for processed or ultra-processed foods and < 5% for processed culinary ingredients, as well as the expansion of the list of foods whose acquisition with federal resources from PNAE is prohibited. This process supported the elaboration of Resolution CD/FNDE n. 6 of May 8, 2020, which provides for the attendance of school feeding to primary education students within the PNAE.

ABSTRACT

O objetivo deste trabalho foi avaliar a associação entre alimentação intuitiva e padrão alimentar, segundo a classificação NOVA, em uma população com diabetes mellitus tipo 2 (DM2). Trata-se de estudo observacional transversal em pacientes atendidos em um hospital universitário de Vitória-ES, Brasil. Para a coleta de dados, foi utilizado um questionário semiestruturado, e o consumo alimentar foi avaliado pelo nível de processamento de acordo com a classificação NOVA. O comer intuitivo foi analisado pela Intuitive Eating Scale-2. Foram avaliados 179 indivíduos, em sua maioria mulheres e idosos. A chance de os indivíduos consumirem alimentos não processados ou minimamente processados dobrou nos participantes que tinham feito dieta (OR = 2,149; IC95% = 1,142-4,045; p = 0,018). Em contraste, comer com permissão incondicional reduziu as chances de os participantes consumirem esse grupo de alimentos em 52,7% (OR = 0,473; IC95% = 0,235-0,952; p = 0,036). Além disso, as chances de os participantes consumirem alimentos ultraprocessados foram 2,34 vezes maiores naqueles que tinham DM2 há mais de 10 anos (OR = 2,344; IC95% = 1,114-4,933; p = 0,025). Ao avaliar o comer intuitivo, observou-se que comer em congruência com as necessidades corporais reduziu em 45% as chances de o indivíduo consumir alimentos ultraprocessados (OR = 0,547; IC95% = 0,309-0,968; p = 0,038). Portanto, as subescalas do comer intuitivo foram diferentemente associadas ao consumo alimentar de acordo com o nível de processamento de alimentos em indivíduos com DM2.


This work aimed to evaluate the association between intuitive eating and dietary pattern, according to the NOVA classification, in a population with type 2 diabetes mellitus (T2DM). This was an observational cross-sectional study in patients at a university hospital in Vitória-ES, Brazil. For data collection, a semi-structured questionnaire was used, and food intake was assessed by the level of processing according to the NOVA classification. Intuitive eating was assessed by the Intuitive Eating Scale-2, and 179 individuals, mostly female and elderly, were evaluated. The chance of individuals consuming unprocessed or minimally processed foods was doubled in those participants who had dieted (OR=2.149; CI95%=1.142-4.045; p=0.018). In contrast, eating with unconditional permission reduced the chances of participants consuming this group of foods by 52.7% (OR=0.473; CI95%=0.235-0.952; p=0.036). Moreover, the chances of participants consuming ultra-processed foods was increased by 2.34 times in those having T2DM for more than 10 years (OR=2.344; CI95%=1.114-4.933; p=0.025). When assessing intuitive eating, it was observed that eating in congruence with bodily needs reduced the chances of the individual consuming ultra-processed foods by 45% (OR=0.547; CI95%=0.309-0.968; p=0.038). Therefore, the subscales of intuitive eating were associated differently with food intake according to the level of food processing in individuals with T2DM

Abstract: Evolving evidence shows that ultra-processed food consumption may increase exposure to chemicals used in food packaging and production, such as per- and poly-fluoroalkyl substances, phthalates, and bisphenols. Studies suggested that these contaminants may be transferred from mother to child through placenta, increasing concerns for both maternal and child health. This study aimed to investigate the association of maternal consumption of ultra-processed foods with newborn exposure to perfluoroalkyl substances (PFAS) in the PIPA Project (The Rio Birth Cohort Study on Environmental Exposure and Childhood Development). The pilot cohort study conducted with 131 pregnant women-child pairs in a public maternity school in Rio de Janeiro, Brazil, was assessed. Maternal dietary intake in the third trimester of pregnancy was evaluated using a qualitative food frequency questionnaire. Food items were classified as non-ultra-processed food and ultra-processed food using the NOVA system and regular consumption of ultra-processed foods was estimated. Newborns of pregnant women who weekly consumed three or more subgroups of ultra-processed food presented the highest level of PFAS (2.47ng/mL; 95%CI: 1.22; 3.72), compared to non-consumption of ultra-processed food investigated (0 ultra-processed food = 1.86ng/mL; 95%CI: 1.38; 2.50). Additionally, cluster analysis grouped ultra-processed food, fish, and PFAS levels. In conclusion, we found increased levels of PFAS in newborns whose mothers were higher consumers of ultra-processed foods.


Resumo: Evidências crescentes demonstram que o consumo de alimentos ultraprocessados pode aumentar a exposição a substâncias químicas utilizadas na produção e embalagem desses alimentos, como os compostos per- e polifluoroalquil, ftalatos e bisfenóis. Os estudos sugerem que esses contaminantes podem ser transferidos da mãe para o feto pela via transplacentária, o que aumenta as preocupações em relação à saúde tanto materna quanto infantil. O estudo buscou investigar a associação entre o consumo materno de alimentos ultraprocessados e a exposição intrauterina aos compostos perfluoroalquil (PFAS) no Projeto PIPA Rio - Projeto Infância e Poluentes Ambientais. Foi avaliada a coorte-piloto com 131 pares gestante-feto em uma maternidade-escola pública no Rio de Janeiro. A ingestão materna no terceiro trimestre da gestação foi avaliada com um questionário qualitativo de frequência alimentar. Os itens alimentares foram classificados entre não ultraprocessados e ultraprocessados, usando o sistema NOVA, e foi estimado o consumo regular de ultraprocessados. Os PFAS foram medidos no sangue do cordão umbilical. Os recém-nascidos de mães que haviam consumido três ou mais subgrupos de ultraprocessados por semana apresentaram os níveis séricos mais elevados de PFAS (2,47ng/mL; IC95%: 1,22; 3,72), comparado com nenhum consumo dos subgrupos de alimentos ultraprocessados (0 alimento ultraprocessado = 1,86ng/mL; IC95%: 1,38; 2,50). Além disso, a análise de clusters agrupou ultraprocessados, peixe e níveis de PFAS. Em conclusão, o estudo mostrou níveis elevados de PFAS em neonatos de gestantes com maior consumo de alimentos ultraprocessados.

Los estudios han sugerido que estos contaminantes pueden transmitirse de la madre al niño, a través de la placenta, incrementando los problemas de salud de la madre y el niño. El objetivo de este estudio fue investigar la asociación del consumo materno de comidas ultraprocesadas con la exposición de los recién nacidos a las sustancias perfluoroalquílicas (PFAS) en el Proyecto PIPA (Estudio de Cohorte de Nacimiento en Río sobre la Exposición Ambiental y Desarrollo en la Infancia). El estudio de la cohorte piloto evaluó a parejas constituidas por 131 mujeres embarazadas y sus hijo/as en una escuela de maternidad pública en Río de Janeiro, Brasil. Se evaluó la ingesta alimentaria materna en el tercer trimestre de embarazo, usando un cuestionario de calidad de frecuencia de la comida. Los ítems alimentarios fueron clasificados como no-comida ultraprocesada y comida ultraprocesada usando el sistema NOVA y se estimó el consumo regular de comidas ultraprocesadas. Las PFAS se determinaron en la sangre del cordón umbilical. Los recién nacidos de mujeres embarazadas que consumieron tres o más subgrupos de comidas ultraprocesada semanalmente presentaron el nivel más alto de PFAS (2,47ng/mL; IC95%: 1,22; 3,72), comparado con ninguno consumo de comida ultraprocesada (0 comida ultraprocesada = 1,86ng/mL; IC95%: 1,38; 2,50). Asimismo, el análisis de conglomerados agrupó comida ultraprocesada, pescado y niveles de PFAS. En conclusión, se encontraron niveles elevados de PFAS en recién nacidos, cuyas madres eran grandes consumidoras de comidas ultraprocesadas.

Results Processed and ultra-processed foods represented 11.0% of daily caloric intake, 53.0% of trans fatty acid, and 12.5% of salt consumed in the study sample. Individuals who had high intake of this food group (≥128.4g/day, median intake) had higher serum phosphorus and pre-dialysis urea values (p=0.038; p=0.013, respectively). Also, individual with higher consumption of processed meat, sausages and ready prepared food had higher pre-dialysis serum urea (p=0.021), while serum potassium was higher among the subjects who consumed more sauces and salt-based seasonings (p=0.002). Conclusion Higher consumption of processed and ultra-processed foods was associated with important biomarkers of metabolic control for hemodialysis subjects, probably due to non-health dietary composition. Nutritional guidelines and intervention strategies must be promoted to reduce consumption of these food-group in thisspecific population.

Também, indivíduos com maior consumo de carne processada, embutidos e refeições prontas apresentaram maior ureia sérica pré-diálise (p=0,021), enquanto o potássio sérico foi maior entre os indivíduos que consumiram mais molhos e temperos á base de sal (p=0,002). Conclusão O maior consumo de alimentos processados e ultraprocessados foi associado a importantes biomarcadores de controle metabólico para indivíduos em hemodiálise, provavelmente devido à composição dietética não saudável. Orientações nutricionais e estratégias de intervenção devem ser promovidas para reduzir o consumo desses alimentos nessa população específica.

RESUMEN En el presente trabajo se expone la evolución del proceso de irradiación en Cuba, los principales resultados científico-técnicos e impactos alcanzados hasta la actualidad y las perspectivas de estas aplicaciones, así como la recuperación de las capacidades de irradiación existentes en el país, el control del proceso de irradiación, gestión de la calidad del proceso y los aspectos normativos establecidos.


ABSTRACTS The present paper deals with the evolution of radiation processing in Cuba, its main scientific results and impact up to now and the perspectives of these applications, as well as the recovery of the irradiation capacities existing in the country, the radiation process control, quality management in the mentioned radiation process and the established regulatory aspects.

Resumo Parte-se do princípio que um sistema alimentar insustentável não é capaz de produzir alimentos saudáveis para o consumo. A alimentação só pode ser considerada saudável se for também sustentável, devendo ultrapassar a perspectiva nutricional. Assim, realizou-se uma revisão narrativa de literatura acerca de sistemas alimentares saudáveis e sustentáveis, englobando aspectos de produção, processamento, comercialização e consumo, visando levantar seus desafios e perspectivas de consolidação. A alimentação saudável e sustentável deve estar relacionada à produção de alimentos que protejam a biodiversidade e promovam o consumo variado, resgatando alimentos, preparações e hábitos culturais tradicionais. Deve ser acessível e disponível a todos, em quantidade e qualidade, baseada em alimentos produzidos e processados na região, por agricultores familiares, de maneira agroecológica, fundamentada na comercialização justa, aproximando a produção do consumo. Além disso, deve ser isento de contaminantes físicos, biológicos ou químicos que causem malefícios a todos os envolvidos, de maneira aguda ou crônica.


Abstract Based on the principle that a non-sustainable food system is not capable of producing healthy food for consumption, food can only be considered healthy if it is also sustainable, going beyond the nutritional perspective. Therefore, a narrative review of the scientific literature on the sustainable and health food system was conducted, regarding aspects of production, processing, marketing and consumption, seeking to pinpoint the challenges and perspectives for its consolidation. Food systems needs to be related to a food production and consumption system which protects biodiversity and promote a diverse consumption, bringing back traditional dishes and preparation techniques. It should also be accessible and available for everyone, both in quantity and in quality, based on food that is locally produced by family farmers through agroecology and founded on fair trade, bringing production and consumption closer together. In addition, it must be free from physical, biological or chemical contaminants that cause damage to everyone involved, whether it be an isolated incident or chronically.

Abstract: Objective: To analyze the contribution of natural, processed and ultra-processed foods to energy and nutrient supply in Mexican households. Materials and methods: The database of the National Household Expenditure Survey 2013 was analyzed (n=58 001), which is a cross-sectional survey. Food supply (g/adult equivalent/day) and energy, macro- and micro-nutrient supplies were estimated. Foods were classified following the Nova system. Households sociodemographic characteristics were analyzed as covariates. Results: Natural foods (NF) contributed with more energy (55.0%) followed by ultra-processed foods (UPF, 21.2%). NF were the main source of most nutrients. Processed culinary ingredients (PCI) and processed foods (PF) had high content of energy, total fats, and saturated fats, but low content of certain micronutrients. Sodium was mainly available in PF (34.6%) and UPF (31.4%). Sugar-sweetened beverages, fast foods, and biscuits and cookies were the main UPF in terms of energy supply. Conclusions; In Mexican households, the PCI, PF and UPF had low nutritional quality.


Resumen: Objetivo: Analizar la contribución de los alimentos naturales, procesados y ultraprocesados a la disponibilidad de energía y nutrientes en los hogares mexicanos. Material y métodos: Se analizó la base de datos de la Encuesta Nacional de Gasto de los Hogares 2013 (n= 58 001), la cual es una encuesta transversal. Se estimó la disponibilidad de alimentos (g/adulto equivalente/día), energía y nutrientes. Los alimentos fueron clasificados siguiendo el sistema Nova. Resultados: Los alimentos naturales (AN) y los ultraprocesados (AUP) contribuyeron con más energía. Los AN fueron la principal fuente de la mayoría de los nutrimentos. Los ingredientes culinarios procesados (ICP) y los alimentos procesados (AP) tenían alto contenido de energía, grasas totales y grasas saturadas pero bajo contenido de ciertos micronutrientes. El sodio estaba disponible principalmente en AP y AUP. Las bebidas azucaradas, comidas rápidas, galletas y panes fueron los principales AUP. Conclusión: En México, los ICP, AP y AUP tienen baja calidad nutricional.

INTRODUÇÃO: Distúrbios osteomusculares relacionados ao trabalho constituem o grupo de doenças ocupacionais mais registradas no Brasil, sendo as indústrias ambientes favoráveis para seu desenvolvimento. Este estudo justifica-se pela necessidade de aprofundar investigações sobre a manifestação de sintomas osteomusculares no ramo industrial agroavícola, temática pouco explorada na literatura nacional. OBJETIVOS: Analisar a prevalência de sintomas osteomusculares em trabalhadores da linha de produção e do setor administrativo de uma indústria agroavícola, caracterizar o perfil sociodemográfico e ocupacional dos dois grupos e identificar ocorrência de associações entre dor e variáveis sociodemográficas e ocupacionais. MÉTODO: Estudo correlacional e transversal, realizado por meio de caracterização sociodemográfica e ocupacional, Questionário Nórdico de Sintomas Osteomusculares e Escala Numérica de Intensidade da Dor. RESULTADOS: Participaram 154 trabalhadores do setor de produção e 24 do de administração. O único sintoma osteomuscular apresentado foi a dor, com prevalência superior a 85% para ambos os setores. Mulheres do setor de produção apresentaram 2,9 vezes mais chances de terem dor do que homens. As regiões mais afetadas no setor administrativo foram pescoço e partes inferior e superior das costas. Já no setor de produção, prevaleceram a região inferior das costas e dos ombros e a parte superior das costas. CONCLUSÕES: A dor foi descrita como o sintoma osteomuscular mais prevalente entre os trabalhadores da indústria agroavícola. Apesar das diferenças nos processos de trabalho entre os trabalhadores administrativos e produtivos, não houve diferenças estatisticamente significativas entre os setores. Por outro lado, ambos apresentaram um altíssimo nível de adoecimento, o que sugere a necessidade de aprofundamento em estudos da relação causal desses sintomas.


BACKGROUND: Work-related musculoskeletal disorders are the most frequently reported group of diseases in Brazil, their occurrence being favored by work in the industrial sector. The present study is justified by the need to investigate more thoroughly the occurrence of musculoskeletal symptoms among poultry farming workers, since this subject is scarcely explored in the Brazilian literature. OBJECTIVE: To analyze the prevalence of musculoskeletal symptoms among production and administrative employees of a poultry farming company, describe the sociodemographic and occupational profile of both groups of workers and test associations between pain and sociodemographic and occupational variables. METHODS: Cross-sectional correlational study which included sociodemographic and occupational characterization and administration of the Nordic Musculoskeletal Questionnaire and a numeric pain rating scale. RESULTS: The sample comprised 154 production employees and 24 administrative workers. Pain was the single musculoskeletal symptom reported, with prevalence of over 85% in both groups. Female production employees exhibited 2.9 times higher odds of pain compared to the males. The body sites most frequently involved were the neck and upper and lower back among the administrative employees and the shoulders and the upper and lower back among the production workers. CONCLUSION: Pain was the most prevalent musculoskeletal symptom in the analyzed sample of poultry farming workers. Statistically significant difference was not found between the groups despite their different work processes. Both groups exhibited extremely high rates of illness, which points to the need for more thorough investigation of the causal relationships of musculoskeletal symptoms

ABSTRACT

ABSTRACT: Biofilms are responsible for most of the interference caused by microorganisms in food processing. The aim of this study was to evaluate the cinnamon (Cinnamomum zeylanicum) essential oil and eugenol sanitizer and anti-biofilm activity against biofilms. Concentrations used of essential oil were 0.0% (control) 0.12%; 0.48%; 0.96% and 1.92%; the amount of eugenol was 0.76%. Concentrations were determined from other published studies. Number of viable cells and quantification the bacterial biomass were determined. Anti-biofilm treatment was effective in preventing the formation of biofilms. The 1.92% concentration was the most satisfactorily with Escherichia coli reduction of 5.91log CFUcm-2 and Staphylococcus aureus reduction of 5.17log CFUcm-2 (P<0.05) biomass of the two bacteria. Sanitizing treatment was not effective in reducing biomass. Seen this, the cinnamon and eugenol essential oil may be promising alternatives for controlling biofilms.


RESUMO: Os biofilmes são responsáveis pela maior parte da interferência causada pelos micro-organismos no processamento de alimentos. O objetivo deste estudo foi avaliar a atividade anti-biofilme do óleo essencial de canela (Cinnamomum zeylanicum) e do composto majoritário eugenol. As concentrações utilizadas de óleo essencial foram de 0,0% (controle), 0,12%; 0,48%; 0,96% e 1,92%; a concentração de eugenol foi de 0,76%. As concentrações foram determinadas a partir de outros estudos publicados. Determinou-se o número de células viáveis e quantificou-se a biomassa bacteriana. O tratamento anti-biofilme foi eficaz na prevenção e formação de biofilmes. A concentração de 1,92% foi satisfatória, com redução de 5,91log CFUcm-2 de células viáveis em biofilme de Escherichia coli e redução de 5,17log CFU cm-2 de Staphylococcus aureus. A biomassa de ambas bactérias foi reduzida significativamente (P<0,05), entretanto, o tratamento sanitizante não foi eficaz na redução da biomassa. Diante dos resultados, o óleo essencial de canela e eugenol podem ser alternativas promissoras no controle de biofilmes.

Objective To understand the situation of seroepidemiology of Toxoplasma gondii infection among employees in a pork food processing enterprise in Dongtai City. Methods Totally 200 employees from a pork food processing enterprise in Dongtai City were selected as the research objects. The venous blood of the selected population was extracted and the IgG antibody against T. gondii in serum was detected by ELISA, and the results were analyzed. Results Among the 200 employees, 36 cases were positive in IgG antibody detection, the positive rate was 18.0%. The positive rate of IgG antibody among workers with different length of service was significantly different (χ2 = 9.813, P < 0.05). With the increase of working age, the positive rate of IgG antibody gradually increased. The positive rate of IgG antibody to T. gondii was significantly higher in the population who had frequent contact with animals. Conclusions The positive rate of IgG antibody against T. gondii in employees in pork food processing enterprises is high. Therefore, the detection of antibodies against T. gondii and health education should be strengthened in this population.
