ABSTRACTS Introduction: Milk and dairy products are nutritious and can play a significant role in a healthy diet. The safety of milk decreases with increasing concentration of arsenic. The Maximum Residue Limits of arsenic is 500 parts per billion (ppb). Objectives: To evaluate the status of arsenic contamination of milk and dairy products produced and processed in some provinces and cities of Vietnam. Methods: A total of 367 samples were tested. Samples were digested before analysis to remove organic compounds, and the total arsenic content determined by atomic absorption spectrophotometry. Results: The average concentrations of total arsenic in liquid milk were 139.32 ppb; in yogurt, 169.81 ppb; in cheese, 221.38 ppb; in milk cake, 232.80 ppb; and in milk powder, 35.43 ppb, respectively. Conclusion: The arsenic concentrations in some samples are higher than the maximum permitted levels according to national regulations.


RESUMEN Introducción: La leche y los productos lácteos son nutritivos y pueden desempeñar un papel importante en una dieta saludable. La seguridad de la leche disminuye con el aumento de la concentración de arsénico. Los límites máximos de residuos de arsénico son 500 ppb. Objetivos: Evaluar el estado de contaminación por arsénico de la leche y los productos lácteos producidos y procesados ​​en algunas provincias y ciudades de Vietnam. Métodos: Se analizaron un total de 367 muestras. Las muestras se digirieron antes del análisis, para eliminar los compuestos orgánicos y se determinó el contenido total de arsénico mediante espectrofotometría de absorción atómica. Resultados: Las concentraciones promedio de arsénico total en la leche líquida fueron 139,32 ppb; en el yogur, 169,81 ppb; en el queso, 221,38 ppb; en el pastel de leche, 232,80 ppb; y en la leche en polvo, 35,43 ppb, respectivamente. Conclusión: Las concentraciones de arsénico en algunas muestras superan los niveles máximos permitidos según la normativa nacional.

ABSTRACT

Abstract Mastitis is the most common disease in dairy herds and the main cause of economic losses in milk production worldwide. This inflammatory reaction of the mammary gland affects the quantity, composition and quality of milk produced and its suitability for the dairy industry. Despite of its importance, Colombia has no regulations on somatic cell count (SCC); that is, no official upper limits have been established for the dairy industry. The current quality-based payment system for raw milk does not encourage local producers to reduce the level of somatic cells. Consequently, Colombia is at a disadvantage compared to countries that include this parameter in their payment schemes and subscribe to international free trade agreements, affecting the competitiveness of the Colombian dairy sector. This article reviews the types of somatic cells, the microbiology of mastitis, its etiology and diagnosis, the changes that generate the composition of milk, and the impact of high SCCs on the quality of dairy products, such as yogurt, cheese, and milk powder. The final section offers a reflection on the problem of high SCCs in Colombia and the lack of regulations in this regard.


Resumen La mastitis es la enfermedad más frecuente en los hatos lecheros y es la principal causa de pérdidas económicas en la producción de leche alrededor del mundo. Esta reacción inflamatoria de la glándula mamaria afecta la cantidad, composición, calidad y aptitud de la leche para procesamiento por la industria. Sin embargo, en Colombia no existe normatividad sobre el recuento de células somáticas, principal indicador de mastitis; es decir, no existen límites oficiales que sirvan de referencia para la industria lechera. El sistema de pago basado en calidad no incentiva al productor a disminuir el nivel de células somáticas. Esto coloca al país en desventaja frente a otros países que exigen este parámetro en su esquema de pago y con los cuales Colombia tiene tratados de libre comercio, afectando negativamente la competitividad del sector lechero colombiano. En este artículo se hace una revisión sobre los tipos de células somáticas, la microbiología de la mastitis, su etiología, el diagnóstico, los cambios que generan la composición de la leche y el impacto que tienen los altos recuentos de células somáticas sobre la calidad de algunos derivados lácteos como yogures, quesos y leche en polvo. En la parte final se presenta una reflexión sobre la problemática de los altos recuentos de células somáticas en Colombia y la falta de normatividad al respecto.


Resumo A mastite é a doença mais frequente nos rebanhos leiteiros e é a principal causa de perdas econômicas na produção de leite em todo o mundo. Essa reação inflamatória da glândula mamária causa efeitos na quantidade, composição, qualidade e aptidão de leite processado pela indústria. No entanto, na Colômbia, não há regulamentação sobre a contagem de células somáticas até o momento, o principal indicador de mastite, ou seja, não há limites oficiais que sejam referência para a indústria leiteira. O sistema de pagamento baseado na qualidade não incentiva o produtor a diminuir o nível de células somáticas. Isso coloca o país em desvantagem em comparação com outros países que exigem esse parâmetro em seu esquema de pagamento e com quem a Colômbia possui acordos de livre comércio, afetando negativamente a competitividade do setor. Este documento analisa os tipos de células somáticas, a microbiologia da mastite, sua etiologia, diagnóstico, alterações na composição do leite e o impacto da alta contagem de células somáticas na qualidade do leite. Alguns derivados de leite, como iogurtes, queijos e leite em pó. Na parte final, é feita uma reflexão sobre o problema da alta contagem de células somáticas na Colômbia e a falta de regulamentação nesse sentido.

ABSTRACT

O objetivo deste estudo foi desenvolver e avaliar iogurte e sobremesa láctea fermentada adicionados de doce de caju. O doce foi elaborado com proporção para atingir 40ºBrix. O iogurte e a sobremesa láctea fermentada foram elaborados e avaliados quanto ao pH, acidez, proteína total, gordura, EST e cinzas após um dia de fabricação. A pós-acidificação foi avaliada durante 35 dias de armazenamento refrigerado. O teste de aceitação e intenção de compra foi realizado após 14 dias de armazenamento refrigerado. Os dados das características físico-químicas, pós-acidificação e avaliação sensorial foram analisados por Análise de Variância e teste de Tukey (p<0,05) ou análise de regressão. Os produtos atenderam os parâmetros físico-químicos e microbiológicos exigidos pela legislação. Na pós-acidificação, o pH dos produtos reduziu ao longo do tempo e a acidez do iogurte foi superior da sobremesa láctea fermentada sendo em média 0,12% de ácido lático durante os 35 dias de armazenamento. O iogurte apresentou maior aceitação e intenção de compra que a sobremesa láctea fermentada. A fabricação dos produtos torna-se viável do ponto econômico, físico-químico e sensorial, além de agregar valor ao soro de leite e o caju.


The aim study was develop and evaluate yogurt and fermented dairy dessert added with cashew sweet. The sweet was prepared in proportion to 40ºBrix. The yogurt and fermented dairy dessert were evaluated for pH, acidity, total protein, fat, total solid and ash content after one day of manufacture. Post-acidification was evaluated during 35 days of refrigerated storage. The acceptance and purchase intention test was performed after 14 days of refrigerated storage. The results of physico-chemical characteristics, post-acidification and sensory evaluation were analyzed by Analysis of Variance and Tukey test (p<0.05) or regression analysis. The products is according the physico-chemical parameters required by the brazilian legislation. In post-acidification, the pH of the products decreased over time and acidity of yogurt was higher than fermented dairy dessert and the acidity on average 0.12% of lactic acid during the 35 days of storage. The yogurt presented a greater acceptance and intention to purchase than the fermented dairy dessert. The manufacture of the products showed viable from the economic point of view, physicochemical and sensorial, besides adding value to the whey and cashew.

ABSTRACT BACKGROUND Constipation is a chronic problem in many patients all over the world. OBJECTIVE - To evaluate the effect of consumption of a probiotic fermented milk beverage containing Bifidobacterium animalis on the symptoms of constipation. METHODS - This randomized, double-blind controlled trial included 49 female patients aged 20 to 50 years and diagnosed with constipation according to the ROME III criteria (Diagnostic Criteria for Functional Gastrointestinal Disorders) and the Bristol Stool Form Scale. The patients were randomized into two groups: the intervention group received the probiotic fermented milk beverage and the control group received non-probiotic milk. Participants were instructed to ingest 150 mL of the beverages during 60 days. At the end of this period, patients were assessed again by the ROME III criteria and Bristol scale. The Wilcoxon test was used to evaluate pre and post-intervention results of the ROME III criteria and Bristol scale. The statistical significance level was considered as 5% ( P ≤0.05). RESULTS - The intervention group showed improvement in the following criteria: straining during a bowel movement ( P <0.001), feeling of incomplete evacuation ( P <0.001) and difficulty in passing stool ( P <0.014), in addition to Bristol scale results ( P <0.001). In the control group, improvements were observed in the following criteria: straining during a bowel movement ( P <0.001), feeling of incomplete evacuation ( P <0.001) and difficulty in passing stool ( P <0.025), in addition to Bristol scale results ( P <0.001). No statistically significant post-intervention differences were observed between the two groups for the Rome III criteria and Bristol scale. CONCLUSION - The results show that the consumption of milk resulted in the improvement of constipation symptoms, regardless of the probiotic culture.


RESUMO CONTEXTO - Constipação é um sintoma crônico que acomete grande parte da população mundial. OBJETIVO - Avaliar o efeito do consumo de bebida láctea com cultura probiótica ( Bifidobacterium animalis ) nos sintomas de constipação intestinal. MÉTODOS - Ensaio clínico randomizado, duplo cego e controlado. A amostra foi de 49 pacientes, do gênero feminino, com idade entre 20 a 50 anos e com diagnóstico de constipação intestinal conforme os critérios de ROMA III ( Diagnostic Criteria for Functional Gastrointestinal Disorders ) e escala de Bristol. As pacientes foram divididas em dois grupos através de randomização, o grupo intervenção recebeu bebida láctea com cultura probiótica e o grupo controle recebeu bebida láctea. Estas foram orientadas a consumir 150 mL diariamente durante 60 dias. Ao final deste período, aplicaram-se novamente os critérios de ROMA III e escala de Bristol. Para avaliação dos critérios de ROMA III e escala de Bristol pré e pós-intervenção, o teste de Wilcoxon foi aplicado. O nível de significância estatística considerado foi de 5% ( P ≤0,05). RESULTADOS - No grupo intervenção houve melhora nos seguintes critérios: esforço para evacuar ( P <0,001), sensação de evacuação incompleta ( P <0,001) e dificuldade na passagem das fezes ( P =0,014), além da escala de Bristol ( P =<0,001). No grupo controle houve melhora nos seguintes critérios: esforço para evacuar ( P <0,001), sensação de evacuação incompleta ( P <0,001) e dificuldade na passagem das fezes ( P =0,025), além da escala de Bristol ( P =<0,001). Verificou-se que os critérios de Roma III e escala de Bristol não houve diferenças estatisticamente significativas entre os grupos pós-intervenção. CONCLUSÃO - Concluiu-se que o consumo de bebida láctea auxiliou na melhora dos sintomas de constipação intestinal, independentemente da cultura probiótica.

ABSTRACT

OBJECTIVE: The main causes of spinal cord ischemia are a variety of vascular pathologies causing acute arterial occlusions. We investigated neuroprotective effects of kefir on spinal cord ischemia injury in rats. METHODS: Rats were divided into three groups : 1) sham operated control rats; 2) spinal cord ischemia group fed on a standard diet without kefir pretreatment; and 3) spinal cord ischemia group fed on a standard diet plus kefir. Spinal cord ischemia was performed by the infrarenal aorta cross-clamping model. The spinal cord was removed after the procedure. The biochemical and histopathological changes were observed within the samples. Functional assessment was performed for neurological deficit scores. RESULTS: The kefir group was compared with the ischemia group, a significant decrease in malondialdehyde levels was observed (p<0.05). Catalase and superoxide dismutase levels of the kefir group were significantly higher than ischemia group (p<0.05). In histopathological samples, the kefir group is compared with ischemia group, there was a significant decrease in numbers of dead and degenerated neurons (p<0.05). In immunohistochemical staining, hipoxia-inducible factor-1alpha and caspase 3 immunopositive neurons were significantly decreased in kefir group compared with ischemia group (p<0.05). The neurological deficit scores of kefir group were significantly higher than ischemia group at 24 h (p<0.05). CONCLUSION: Our study revealed that kefir pretreatment in spinal cord ischemia/reperfusion reduced oxidative stress and neuronal degeneration as a neuroprotective agent. Ultrastructural studies are required in order for kefir to be developed as a promising therapeutic agent to be utilized for human spinal cord ischemia in the future.

ABSTRACT

As Boas Práticas de Fabricação (BPFs) são pré-requisitos indispensáveis para a implantação de qualquer programa de qualidade e segurança alimentar e consiste em um conjunto de princípios e regras para a correta manipulação de alimentos. O objetivo deste trabalho foi realizar um monitoramento a fim de avaliar se itens como instalações, equipamentos, procedimentos e processos de um laticínio localizado no Município de Rio Pomba, MG, atende às BPF. Para tanto se usou como critério avaliativo um checklist baseado na Resolução - RDC n.°275 do Ministério da Saúde. Constatou-se que o laticínio obteve média para edificação e instalação, equipamentos e utensílios, higiene dos manipuladores, produção e transporte dos alimentos e documentação de 39,0%, 30,0%, 50,0%, 71,3% e 48,7% de conformidade, respectivamente. De forma geral o laticínio apresentou 47,8% de conformidade, sendo classificado como do grupo 3 de atendimento aos itens previstos na legislação. Portanto, se faz necessária uma maior fiscalização dos órgãos competentes, pois inadequações em relação às BPFs podem comprometer a saúde dos consumidores.


The Good Manufacturing Practices (GMPs) are pre-requisites for the implementation of any program of quality and food safety and consists of principles and rules for proper food handling. The objective of this work was to monitor in order to assess whether items such as facilities, equipment, procedures and processes of a dairy located in the city of Rio Pomba, MG, meets GMP. For this used as an evaluation criteria checklist based on Resolution - RDC n. 275 ° of the ministry of health. The dairy obtained media for building and installation, equipment and utensils, hygiene of food handlers, food production and transportation and documentation of 39.0%, 30.0%, 50.0%, 71.3% and 48.7% accordance, respectively. The dairy showed 47.8% accordance and is classified as group 3 service to items in the legislation. Therefore, it is necessary to improve enforcement, for inadequacies in relation to GMPs may compromise the health of consumers.

ABSTRACT

This study developed a fermented milk with Lactobacillus plantarum and evaluated its microbiological, physical-chemical and sensory characteristics during 70 days of storage at 10ºC. The study analyzed the counts of total viable cells, total and thermotolerant coliforms, yeast and mold; acidity, pH, ash, fat and total solids; sensory evaluation and purchase intention of the final product by consumers. Nutrition information was compared with seven commercial brands of fermented dairy products. The final formula contained 10% sugar, 6% milk powder and 4% microbial inoculum. The final product was fat-free. Acidity, ash content and total solids were stable during storage, unlike pH. No total or thermotolerant coliforms, yeast or mold were detected. L. plantarum counts ranged from 10.1 Log10 CFU mL-1 at the beginning to 8.9 Log10 CFU mL-1 at the end of the storage period. The product had good acceptance and high purchase intent. The nutrition information of fermented milk was similar to those of commercial brands evaluated. L. plantarum demonstrated good viability in fermented milk, and although not considered a probiotic food in Brazil, it is promising for the production of foods with functional properties and/or health claims.


Desenvolveu-se uma formulação de leite fermentado com Lactobacillus plantarum e avaliou-se seu comportamento microbiológico, físico -químico e sensorial durante 70 dias de armazenamento em refrigeração. Foi analisada a contagem total de células viáveis de Lactobacillus plantarum, coliformes totais e termotolerantes, e bolores e leveduras; acidez titulável, pH, teor de cinzas, gordura e extrato seco total; análise sensorial e intenção de compra do produto final. A informação nutricional do produto foi elaborada e comparada a sete leites fermentados. A formulação final conteve 10% de açúcar, 6% de leite em pó e 4% de inóculo microbiano. O produto final foi isento de gordura. A acidez, os teores de cinzas e o extrato seco total foram estáveis durante a estocagem, diferentemente do pH. Não foi detectada a presença de coliformes totais e termotolerantes, bolores e leveduras. A contagem do L. plantarum variou de 10,1 a 8,9 Log10 UFC mL-1, no início e final da estocagem. Obteve-se boa aceitação e intenção de compra do produto final. A informação nutricional do leite fermentado foi semelhante às marcas comerciais avaliadas. L. plantarum apresentou boa viabilidade em leite fermentado, e, embora não seja considerado um alimento probiótico no Brasil, o mesmo é promissor na produção de alimentos com propriedades funcionais e/ou de saúde.

ABSTRACT

Background: Sialic acids are acidic sugars with a 9-carbon backbone, expressed as terminal residue on mammalian glycoconjugates. Sialic acid was found in two forms as N-acetylneuraminic acid (Neu5Ac) and N-Glycolylneuraminic acid (Neu5Gc) in meat and milk products. Neu5Ac is important for the brain and neuro development while Neu5Gc is suspected as human carcinogen. There is no data reported on sialic acid content in Indian milk and milk based products. Objective: To determine sialic acid (Neu5Ac and Neu5Gc) content in Indian milk and milk products and thermal stability of non-human sialic acid (Neu5Gc) evaluation. Design: Milk products like chocolate, infant food products, milk based energy drinks, butter etc were examined for the sialic acid content. For Neu5Gc thermal stability studies cow, buffalo, cross cows and processed milk were used. Conclusion: The study indicates the level of sialic acid (Neu5Ac and Neu5Gc) in Indian milk and milk based products. Further the stability studies shows degradation (20 to 22 %) of non-human sialic acid (Neu5Gc) to the total sialic acid content.

ABSTRACT

This study was conducted to investigate the relationship among the current status of calcium intake from milk and milk products, physical growth and bone mineral density in 664 male and female middle school and high school students aged 15-17 years. In the study, the current status of calcium intake from milk and milk products was analyzed, and the height, body composition, and bone mineral density of the right heel bone (calcaneus) were measured. The daily calcium intake of milk and milk products was calculated as the 'dairy equivalent of calcium', which is the calcium content in 200 mL of white milk. The cutoffs of tertiles of the dairy equivalent of calcium were calculated and then the subjects were categorized into 3 groups according to the tertiles, Q1 group (lower intake group), Q2 group (middle intake group) and Q3 group (upper intake group). The daily calcium intake of milk and milk products in Q1, Q2 and Q3 groups was 16.2 mg, 99.7 mg, and 284.0 mg, respectively, and the ratio of milk and milk product consumption to the daily total calcium intake was 5.4%, 27.4%, and 49.7%, respectively. The ratio of total calcium intake to the daily recommended intake in study subjects was 30.5% in Q1, 42.3% in Q2, and 60.7% in Q3, with significant differences (P < 0.05). Height, body weight, BMI, and % of body fat in three tertile groups (Q1, Q2 and Q3) were not significantly different. However, the T scores for bone mineral density in female students in three tertile groups (Q1, Q2 and Q3) was significantly different (P < 0.05). The study showed that the intake of milk and milk products in adolescents, particularly in girls, can improve the bone mineral density without increasing body weight, and thus confirmed that milk intake is important in adolescence.

ABSTRACT

Foram realizados dois experimentos (experimento 1 - alimentação convencional e experimento 2 - alimentação das matrizes, a partir de 109 dias de gestação, na lactação e dos leitões lactentes com ração sem farelo de soja), com o objetivo de avaliar os efeitos de fontes proteicas (farelo de soja - FS, soja semi-integral extrusada - SSIE e produtos lácteos - PL) sobre a morfologia intestinal de leitões abatidos aos 0,5 e 15 dias após a desmama. Foram utilizados 27 leitões, desmamados aos 25 dias de idade, sendo que em cada idade, nove leitões foram abatidos. Utilizou-se o delineamento em blocos ao acaso, em esquema fatorial 3 x 3 (três dietas x três idades de abate). Os resultados demonstraram que os animais recebendo FS apresentaram menores alturas das vilosidades e relação vilosidade:cripta, quando comparados àqueles que receberam SSIE ou PL, não havendo, entretanto, diferenças entre estes. A altura da vilosidade e a relação vilosidade:cripta não foram afetadas pela alimentação diferenciada das matrizes e dos leitões antes da desmama. A profundidade das criptas não foi afetada pelas dietas ou idades de abate, dentro de cada experimento, em nenhum dos segmentos estudados, sendo, no entanto, menor no duodeno e maior no jejuno e íleo dos animais do exp. 2, quando comparados àqueles do exp. 1. Concluiu-se que o FS afetou negativamente a altura das vilosidades e a relação vilosidade:cripta após a desmama; que a morfologia intestinal foi mais afetada aos cinco dias, mostrando sinais de recuperação aos 15 dias após a desmama e que a alimentação das matrizes não afetou a morfologia dos segmentos do intestino delgado.


Two experiments (experiment 1 - conventional feeding and experiment 2 - feeding of the sows, starting at 109 days of pregnancy and during lactation, and the lactating piglets, with rations without soybean meal) were conducted to evaluate the effects of sources of protein (soybean meal-SBM, extruded semi-integral soybean-ESISB, and milk products-MP) on the intestinal morphology of piglets slaughtered at the 0, 5 and 15 days later at weaning. Twenty-seven piglets weaned with 25 days of age were used, being nine piglets slaughter in each slaughtering age. A 3 x 3 factorial (3 diets x 3 slaughtering ages) was studied, according to a randomized block design. The results showed that animals receiving SBM, presented lower values of villi height and villus:crypt ratio when compared to those that received ESISB or MP. The villi height and the villus:crypt ratio were not affected by the differential feeding of the sows and of the piglets before the weaning. The depth of the crypt was not affected by diets or slaughtering ages in none of the segments studied being, however, smaller in the duodenum and bigger in the jejunum and ileo of the animals of exp. 2. It was concluded that the SBM was the affected the height of the villi and the relationship villi:crypt negatively after it weans. The intestinal morphology was more affected at five days, showing signals of recovering at 15 days after weaning and that the feeding of the sows did not affect the morphology of the segments of the thin intestine.

ABSTRACT

Se considera que la población infantil es el grupo mas sensible a los contaminantes provenientes de la ingesta de alimentos y debido a la alta relación consumo/ peso corporal. En vista de la problemática mundial de la contaminación ambiental por plaguicidas en Argentina no existe hasta el momento información sobre ingestas deplaguicidas y evaluación del riesgo en este grupo. Los alimentos infantiles (leches y productos lácteos) cubren una parte importante de los requerimientos nutricionales diarios para esta población pero al mismo tiempo puede contribuir con la exposición a contaminantes.El presente trabajo fue realizado a fin de investigar plaguicidas en alimentos especialmente desarrollados y recomendados para neonatos y niños. Se analizaron residuos de plaguicidas organoclorados en 50 muestras de leches maternizadas y en 51 muestrasde productos lácteos (postres y yugures) recogidas en el mercado local de Buenos Aires durante el período febrero de 2001 a diciembre de 2003. La investigación fue realizada mediante cromatografía gaseosa con detector de captura de electrones e inyección automática. Los resultados fueron expresados en ng/mL y se consideraron los siguientes grupos: €Aldrinas;€Clordano; €DDT; €Endosulfán; €HCH; €Heptacloro; Endrin; HCB y Lindano. Con los resultados obtenidos se calculó la Ingesta Diaria Estimada (IDE) en base al consumo de alimentos lácteos y el peso corporal. Los resultados fueron comparados con las IDAs recomendadas por el Codex Alimentarius. De las 101 muestras analizadas el 10 % no contiene ninguno de los plaguicidas investigados, 24,8% contiene al menos un pesticida, 19,7% contiene dos y el 2 % mostró evidencia de siete u ocho plaguicidas organoclorados de los diferentes grupos. De todos los grupos de pesticidas investigados las €Aldrinas y €DDT tuvieron porcentajes representativos (32%), y el€Heptachlor y €HCH las frecuencias mas elevadas, (57%) y (53%) respectivamente...


Children population is considered the most sensitive group to contaminants by food intake due to the high ratio food consumption/ body weight. Despite the worldwide problematic of pesticides environmental pollution in Argentine untilthis moment does not exist data about pesticide intake and risk assessment in this group. Baby food (milk and milk products) cover an important part of the daily nutritional requirements of this population but as the same time could contribute with the exposure to contaminants. The present work was aimed to investigate pesticides in products specially manufactured and recommended for neonates andinfants. Organochlorine pesticides residues were assessed on 50 milk samples and 51 milk products colleted at different local markets at Buenos Aires, between February 2001 and December 2003. The pesticides determination was performed by gas chromatography electron capture detection. The results were expressed in ng/mL and it was considered the following groups:€Aldrins; €Chlordane; €DDT; €Endosulfan; €HCH; €Heptachlor; Endrin; HCB and Lindane. With the result obtained the Estimate Daily Intake (EDI) was calculated on the basis of the daily consumption and the average body weight. The result obtained wascompared with the Acceptable Dialy Intake (ADI) recommended by the Codex Alimentarius. Among 101 samples analyzed, 10% did not contain pesticides residues, 24.8% contained at least one pesticide, 19.7% containedtwo and 2% showed evidence of seven and eight organochlorine pesticides. ABSTRACT

This study was performed to investigate the preference and consumption pattern on milk and milk products of middle and high school students. The subjects were 1,195 students(590 middle school and 605 high school students) living in Geochang area. The survey was conducted by using a self-administered questionnaire in November, 2004. The results were as follows. Sixty-three point four percent of the subjects liked milk, and the main reason was 'accelerate growth and development'(55.4%). Preferred tastes of milk were 'savory taste'(35.4%) and 'sweet taste' (29.9%). Banana milk, chocolate milk, strawberry milk, ice cream, yoplait and yogurt were highly preferred. General preference for different kinds of milk was significantly higher in high school students and male students than in middle school students and female ones. With regard to preference for dairy products, cream (p<0.01) and butter(p<0.05) was preferred more by male students than by female ones, ice cream(p<0.05), yoplait (p<0.05) more by female students than male ones. The score of milk intake frequency was 3.84(3~4 times a week) out of 5 points(7 times a week) for white milk, and that of chocolate milk was 1.98, banana milk 1.96, strawberry milk 1.72, coffee milk 1.65, showing that these products were drank less then once a week. In addition, the white milk intake frequency was significantly higher in middle school students and male students than in high school students and female students(p<0.001). Preference for milk showed a positive correlation with preference for dairy products (r=0.543, P<0.001) and frequency of milk intake(r=0.429, P<0.001). This suggests that those who prefer milk high tend to prefer dairy products and to show high milk intake frequency. In addition, milk intake frequency was in a high positive correlation with dairy product intake frequency(r=0.648, P<0.001).
