A qualidade da higienização industrial deve ser avaliada considerando- -se, entre outros aspectos, o risco que a contaminação alimentar representa para a saúde pública. Este trabalho buscou avaliar as condições higienicossanitárias de superfícies de 25 uniformes de frigorífico, por meio de análise microbiológica para micro-organismos mesófilos aeróbios (UFC/ cm²), conforme a técnica recomendada swab test, avaliando a eficiência do processo de lavagem dos uniformes. Observou-se que 4% das superfícies dos uniformes apresentaram contagens abaixo ou igual 4,0 x100 UFC/ cm², demonstrando condições higiênicas satisfatórias e indicando eficiência nas técnicas de higienização dos uniformes, portanto, não representando riscos de contaminação cruzada através dos uniformes. Tais achados demonstraram que o processo de higienização dos uniformes realizado pelo frigorífico é eficiente e eficaz na redução da carga microbiana, comprovando as boas condições higienicossanitárias dos mesmos.

A total of 262 dietitians (in 97 college foodservices nationwide, 86 elementary school foodservices, and 79 middle & high school foodservices in the Changwon area) were given a survey questionnaire composed of 18 GMP and 29 SSOP items from May to July, 2011. As a whole, total usage level of GMP facilities (3.65/5 points) and total management level of SSOP (3.86) in college foodservices showed no significant differences compared to those in elementary school foodservices (GMP 3.74, SSOP 4.02) and middle & high school foodservices (GMP 3.75, SSOP 3.95). However, the results of this study suggest that seven items of the GMP facilities and five items of the SSOP should be improved for the development of the HACCP facility model in college foodservices. Those items that showed considerably lower points in GMP were as follows: 'Drain pipes from sinks of the cooking area are connected directly to the drain (3.74)' (P<0.001), 'The grease trap is installed outside the cooking area equipped with an oil separator (3.24)' (P<0.01), 'Entrance and the cooking area are adequately equipped with hand-washing and shoe disinfecting facilities (3.61)' (P<0.001), 'Cooking area, food storage, and dining area are adequately equipped with insect and rodent repellents (3.72)' (P<0.001), 'Cooking areas are equipped with air-conditioning/heating system and ventilation facility for maintenance of temperature and humidity (3.35)' (P<0.05), and 'Toilets for cooking staff only are provided; the its doorways are not directly accessible from the cooking area (3.25)' (P<0.01).

Las buenas prácticas de fabricación (BPF) y los procedimientos operativos estándares de saneamiento (POES) en planta son considerados los pre-requisitos esenciales para la implementación del sistema de análisis de peligros y puntos de control crítico (HACCP) como una herramienta para la inocuidad de alimentos durante su procesamiento. El objetivo de esta investigación fue la evaluación de las BPF/POES en una línea de sardina (Sardinella aurita) entera congelada. Se verificó el cumplimiento de las BPF mediante la planilla de evaluación del MSAS (Ministerio de Salud) de Venezuela y de los POES a través de un cuestionario propuesto por la FDA. Las BPF y los POES fueron evaluados en base a deméritos, se obtuvo un valor en porcentaje por cada pre-requisito y fue referido como efectividad higiénica. Los resultados obtenidos de la evaluación de las BPF indicaron que la planta cumple con la mayoría de las condiciones de edificaciones e instalaciones, equipos y utensilios, requisitos higiénicos de la producción, aseguramiento de la calidad higiénica, almacenamiento y transporte, obteniendo una efectividad higiénica satisfactoria de un 84%. El nivel de cumplimiento de los POES fue de un 53,12% con deméritos en todos los aspectos evaluados, debido a la inexistencia de un documento guía, carencia de controles en el plan de saneamiento y de liderazgo en ejecutar acciones correctivas. Por lo tanto, se diseñó un programa de control sanitario basado en los POES.


Evaluation of prerequisites programs for a HACCP plan for frozen sardine plant. Good manufacturing practices (GMP) and sanitation standard operating procedures (SSOP) are prerequisites programs for the application of the Hazard Analysis and Critical Control Point (HACCP) system as a food safety approach during processing. The aim of this study was to evaluate GMP/SSOP prerequisites in processing line of frozen whole sardine (Sardinella aurita). The GMP compliance was verified according to a standard procedure of the Ministry for the Health of Venezuela, and the SSOP were assessed according to a checklist proposed by the FDA. GMP and SSOP were evaluated following a demerit-based approach. A percentage value was calculated and referred to as sanitary effectiveness. Results indicated that the plant had a good level of compliance with GMP from assessment of buildings and facilities, equipment and tools, hygienic requisites of the production, assurance of the hygiene quality, storage and transportation, and the percentage of sanitary effectiveness was 84%. The level of compliance for SSOP was 53,12 % with demerits found in all assessed aspects consisting of inexistent guidelines, lack of control in the sanitary plan and lack of leadership in applying corrective actions. Thus, an improvement in the plant sanitation program was designed targeting SSOP.

Objective To evaluate the practical value of Serology, PCR-SSP and PCR-SSOP for HLA-B typing. Methods A total of 30 samples, the blood of patients and donors waiting kidney transplantation, were used in the study. HLA-B typing was performed by one-step monoclonal antibody typing, micro PCR-SSP typing and PCR-SSOP reverse hybridisation. Results All samples were successfully typed by three methods. The difference between serological and PCR-SSP typing was 13%. The difference between PCR-SSOP and PCR-SSP typing was 3%. Conclusion Serology is high discrepancy rate and low-resolution, but cheap, simple and rapid. PCR-SSP and PCR-SSOP typing are high specific and accuracy. SSP is suitable for several samples, and SSOP is for lots of samples simultaneously although it needed long time.

BACKGROUND: Specific IgE responses to allergens provide useful models for evaluating the genetic factors that control human immune responses. HLA class II gene products are involved in the antigen presentation of exogenous antigens. OBJECTIVE: The aim of this study was to evaluate whether susceptibility or resistance to asthma induced by the citrus red mite (Panonychus citri, CRM) was associated with HLA class II gene-encoded antigens. METHODS: Peripheral venous blood samples were collected from two groups of unrelated Korean adults. Ninety-one patients with citrus red mite-induced asthma and 98 exposed, healthy control subjects. The second exon of the HLA-DRB1 genes was selectively amplified by the polymerase chain reaction method. HLA typing was carried out using PCR-sequence specific oligonucleotide probes(PCR-SSOP). RESULTS: The frequency of HLA-DR7 was significantly higher among the CRM-sensitive asthmatics than among the controls (17.6% vs 4.1%, RR=3.92, p=0.01). Conversely, the frequency of HLA-DR4 was significantly lower among the CRM-sensitive asthmatics than among the controls(19.8% vs 40.8%, RR=0.36, p=0.01). No significant difference was found in the distributions of the other HLA-DRB1 gene-encoded antigens between the two groups. CONCLUSION: HLA-DRB1 genes may be involved in the development of citrus red mite-induced asthma. In addition, HLA-DR7 may increase, and DR4 decrease, the risk of developing asthma in exposed individuals.

BACKGROUND: Pulmonary tuberculosis is affected by environmental factors, such as hygiene, nutrition, and socioeconomic status. Recently it has also been shown to be correlated with specific HLA types in foreign countries, although the mechanism underlying this association remains unknown. The aim of this study was to investigate the frequency and contribution of specific HLA alleles to pulmonary tuberculosis in Koreans. METHODS: HLA alleles of 97 patients whose illness was diagnosed as pulmonary tuberculosis by sputum acid-fast bacilli stain, culture, chest X-ray, and clinical evaluation at the Korean National Tuberculosis Association Department of Medical Operation were compared to those of 100 blood donors as controls. The polymerase chain reaction-sequence specific oligonucleotide probes (PCR-SSOP) method was used to define HLA-DQA1, HLA-DQB1, and HLA-DRB1 alleles. RESULTS: Among the patients analyzed by PCR- SSOP for HLA-DQA1 alleles, 63.9% were typed as HLA-DQA1*01, 50.5% HLA-DQA1*03, 22.6% HLA- DQA1*05, 8.2% HLA-DQA1*02, 7.2% HLA-DQA1* 06, and 4.1% HLA-DQA1*04. No difference in the distribution of HLA-DQA1 alleles between patients and healthy controls could be found, with the exception of HLA-DQA1*04, which was more common among controls. Regarding HLA-DQB1 alleles among the patients, 60% were typed as HLA-DQB1*03, 45% HLA-DQB1*06, 21.3% HLA-DQB1*04, 18.8% HLA- DQB1*05, and 11.3% HLA-DQB1*02. The allele distribution of HLA-DQB1 was not significantly different between patients and controls. For HLA-DRB1 alleles, 29.5% were typed as HLA-DRB1*02, 27.4% HLA- DRB1*08, 25.3% HLA-DRB1*04, 23.2% HLA-DRB1* 09, 20% HLA-DRB1*12, and 12.6% HLA-DRB1*13. There was also no difference between patients and controls in the allele distribution of HLA-DRB1. CONCLUSION: In Korea, where tuberculosis is relatively prevalent, pulmonary tuberculosis seems to be independent of HLA-DQA1, HLA-DQB1, and HLA- DRB1, although we found a statistically significant difference in HLA-DQA1*04 frequency between tuberculosis patients and controls.
