RESUMO

Bisphenol A (BPA), an endocrine disrupter, can migrate from packaging material into food stuff. This research was designed to measure BPA levels in makdous, a traditional Syrian food. Forty three samples of makdous stored in different plastic containers (polyethylene (PE), polypropylene (PP), and unspecified plastic containers) were analyzed every 3 months for one year beginning July 2017. Quantification of BPA was carried out by an RP-HPLC system equipped with fluorescence detector after solid phase extraction. Migration was found in PE and PP plastic containers with slight differences. Statistically significant differences in BPA levels were observed between samples assayed after two weeks of preparation and samples assayed after 12 months (mean 16.32 vs. 38.26 µg/kg, p value=0.003). According to these amounts, BPA levels were all under the specific migration limit of 0.05 mg/kg as newly referred in Regulation (EU) No 2018/213. These levels of exposure would only contribute to 2.15% and 2.75% of the EFSA t-TDI in both men and women respectively based on mean dietary exposure estimates derived from a 24-h dietary information study from 875 participants. Hence there are no concerns about potential health risks from makdous consumption

The objective of the current study was to encapsulate flaxseed oil extracted from finely grounded flaxseed powder and determined for its fatty acids content by GC/FID. Ionotropic gelation method was used to form beads containing 40% flaxseed oil with vitamin E being used as an antioxidant agent. The study employed calcium chloride solution as crosslinking agent with a combination of sodium alginate and salep. The effect of polymer concentrations and calcium chloride concentration on the morphology, entrapment efficiency and oil release was studied. The encapsulation efficiency reached 93.46 ± 0.064% using 0.6% of salep and 2% sodium alginate with 0.3M calcium chloride gelling solution. In SGF medium, the matrix released only about 28.56% of the entrapped flaxseed oil after 2 hours. The rest of the oil then released in the SIF medium, continuing for up to 5 h to release 99.32% of the oil.

RESUMO

Caffeine [1,3,5-trimethylxanthine], a mild addicting drug was isolated and characterized from soft drinks, tea, coffee, mate and cacao commercially available in Syria. Isolation was done by liquid-liquid extraction using chloroform as an extracting solvent. Quantification of the caffeine isolated was done by High performance liquid chromatography with UV/Vis detector [275 nm] and UV/Vis spectrophotometer at the same lamda[max]. In HPLC, acetate buffer [pH=4.5] and methanol [1:1] was used as mobile phase. The obtained results were compared with caffeine content in various beverages as mentioned in US Food and Drug Administration tables
