In order to address the increasingly prominent issues of water resource protection and agricultural non-point source pollution in the Erhai Lake Basin, this study conducted a two-year field experiment in Gusheng Village, located in the Erhai Lake Basin. In 2022, two irrigation treatments were set up: conventional flooding irrigation (CK) and controlled irrigation (C), with three replicates for each treatment. In 2023, aiming to enhance the utilization rate of rainwater resources and reduce the direct discharge of dry-farming tailwater from upstream into Erhai Lake. The paddy field was used as an ecological storage basin, and the water storage depth of the paddy field was increased compared to the depth of 2022. Combined with the deep storage of rainwater, the dry-farming tailwater was recharged into the paddy field to reduce the drainage. In 2023, two water treatments, flooding irrigation with deep storage and controlled drainage (CKCD) and water-saving irrigation with deep storage and controlled drainage (CCD) were set up, and each treatment was set up with three replicates. The growth and physiological index of rice at various stages were observed. Nitrogen leaching of paddy field in surface water, soil water, and groundwater under different water treatments after tillering fertilizer were observed. The research results show that the combined application of organic and inorganic fertilizers under organic planting can provide more reasonable nutrient supply for rice, promote dry matter accumulation and other indices, and also reduce the concentration of NH4+-N in surface water. Compared with CK, the yield, 1000-grain weight, root-to-shoot ratio, and leaf area index of C are increased by 4.8%, 4.1%, 20.9%, and 9.7%, respectively. Compared with CKCD, the yield, 1000-grain weight, root-to-shoot ratio, and leaf area index of CCD are increased by 6.5%, 3.8%, 19.6%, and 21.9%, respectively. The yield in 2023 is 19% higher than that in 2022. Treatment C can increase the growth indicators and reduce the net photosynthetic rate to a certain extent, while CCD rain-flood storage can alleviate the inhibition of low irrigation lower limit on the net photosynthetic rate of rice. Both C and CCD can reduce nitrogen loss and irrigation amount in paddy fields. CCD can reduce the tailwater in the Gusheng area of the Erhai Lake Basin to Erhai Lake, and also can make full use of N, P, and other nutrients in the tailwater to promote the formation and development of rice. In conclusion, the paddy field rain-flood storage methodology in the Erhai Lake Basin can promote various growth and physiological indicators of rice, improve water resource utilization efficiency, reduce direct discharge of tailwater into Erhai Lake, and decrease the risk of agricultural non-point source pollution.

Strawberry wine production is a considerable approach to solve the problem of the Chinese concentrated harvesting period and the short shelf life of strawberries, but the appropriative strawberry cultivars for fermentation are still undecided. In this study, the strawberry juice and wines of four typical strawberry cultivars named Akihime (ZJ), Sweet Charlie (TCL), Snow White (BX), and Tongzhougongzhu (TZ) were thoroughly characterized for their physicochemical indicators, bioactive compounds, and volatile organic components (VOCs) to determine the optimal strawberry cultivars for winemaking. The results showed that there were significant differences in the total sugar content, pH, total acid, and other physicochemical indexes in the strawberry juice of different cultivars, which further affected the physicochemical indexes of fermented strawberry wine. Moreover, the content of polyphenols, total flavonoids, vitamin C, and color varied among the four strawberry cultivars. A total of 42 VOCs were detected in the strawberry juice and wines using headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPME-GC-MS), and 3-methyl-1-butanol, linalool, trans-2-pinanol, hexanoic acid, and hexanoic acid ethyl ester were the differential VOCs to identify the strawberry wine samples of different cultivars. Overall, strawberry cultivar ZJ had a relatively high VOC and bioactive compound content, indicating that it is the most suitable cultivar for strawberry wine fermentation. In addition to determining the relatively superior fermentation characteristics of cultivar ZJ, the results may provide a theoretical basis for the raw material quality control and quality improvement of strawberry wine.

Rapeseed (Brassica napus L.) is the second largest globally cultivated oil crop, but the effects of post-harvested ripening on rapeseed quality is unclear and unpredictable. This study reveals the relationship between post-harvest ripening periods (PHR) and physicochemical quality of different rapeseed cultivars using comprehensive physicochemical indicators analysis. The results indicate that PHR led to a gradual decrease in chlorophyll, carotenoid and moisture content but continually increased oil and total phenol content (TPC). Besides, 295 lipid molecules from 13 lipid subclasses were identified, revealing that the relative content of triacylglycerol (TG) was progressively increased while diacylglycerol (DG) demonstrated a consistent decline throughout the PHR. Correlation analysis, hierarchical cluster analysis (HCA) and principal component analysis (PCA) were employed to construct and verify the comprehensive quality evaluation model for rapeseeds in PHR. This paper develops a comprehensive quality evaluation model for post-harvest ripening rapeseeds and advances the development of agricultural products.

The increasing production of industrial solid waste requires better disposal solutions. Porous hollow microspheres (PHM) are small inorganic materials with high surface area and adsorption capacity, but their potential for use in anaerobic digestion (AD) has not been explored. With PHM as additive, the effects of different industrial solid wastes (waste glass, steel slag, and fly ash) with different loadings (2 %-8 %), respectively, on the AD of corn straw were investigated in this study. The results showed that PHM could supplement trace elements and promote biofilm formation, which effectively shortened the lag period (25.00-60.87 %) and increased the methane yield (4.75 %-16.28 %). The 2 % PHM loading based on steel slag gave the highest methane yield (300.16 NmL/g VSadd). Microbial and PICRUSt2 analyses indicated that PHM enriched hydrolytic and acidogenic bacteria, increased the abundance of methanogenesis-related enzyme genes. This study provides a theoretical basis for the comprehensive utilization of coupled industrial and agricultural wastes.

Lettuce is a globally important cash crop, valued by consumers for its nutritional content and pleasant taste. However, there is limited research on the changes in the growth indicators of lettuce during its growth period in domestic settings. Quality assessment primarily relies on subjective evaluations, resulting in significant variability. This study focused on hydroponically grown lettuce during the rosette stage and investigated the patterns of changes in the indicators and spectral curves over time. By employing spectral preprocessing and selecting characteristic wavelengths, three models were developed to predict the indicators. The results showed that the optimal model structures were S_G-UVE-PLSR (SSC and vitamin C) and Nor-CARS-PLSR (moisture content). The PLSR models achieved prediction set correlation coefficients of 0.8648, 0.8578, and 0.8047, with residual prediction deviations of 1.9685, 1.9568, and 1.6689, respectively. The optimal models were integrated into a portable device, using real-time analysis software written in Matlab2021a, for the prediction of the physicochemical indicators of lettuce during the rosette stage. The results demonstrated prediction set correlation coefficients of 0.8215, 0.8472, and 0.7671, with root mean square errors of prediction of 0.5348, 1.5813, and 2.3347 for a sample size of 180. The small discrepancies between the predicted and actual values indicate that the developed device can meet the requirements for real-time detection.

This study analyzed the effects of benzoic acid (BA) on the physicochemical properties and microbial community structure of perilla rhizosphere soil. The analysis was based on high-throughput sequencing technology and physiological and biochemical detection. The results showed that with the increase in BA concentration, soil pH significantly decreased, while the contents of total nitrogen (TN), alkaline nitrogen (AN), available phosphorus (AP), and available potassium (AK) significantly increased. The activities of soil conversion enzymes urease and phosphatase significantly increased, but the activities of catalase and peroxidase significantly decreased. This indicates that BA can increase soil enzyme activity and improve nutrient conversion; the addition of BA significantly altered the composition and diversity of soil bacterial and fungal communities. The relative abundance of beneficial bacteria such as Gemmatimonas, Pseudolabrys, and Bradyrhizobium decreased significantly, while the relative abundance of harmful fungi such as Pseudogymnoascus, Pseudoeurotium, and Talaromyces increased significantly. Correlation analysis shows that AP, AN, and TN are the main physicochemical factors affecting the structure of soil microbial communities. This study elucidates the effects of BA on the physicochemical properties and microbial community structure of perilla soil, and preliminarily reveals the mechanism of its allelopathic effect on the growth of perilla.

The effect of fermentation treatment on the surface morphology, crystal structure, molecular weight, chain length distribution, and physicochemical properties of corn starch was investigated using natural fermentation of corn ballast. The amylose content in corn ballast starch reduced at first after natural fermentation, then grew, following the same trend as solubility. There were certain erosion marks on the surfaces of fermented corn ballast starch granules. The crystalline structure of corn ballast starch remained the same, i.e., a typical A-type crystalline structure, at different fermentation times; however, the intensities of diffraction peaks were different. The weight-average molecular weight of starch first increased and then decreased after fermentation. The content of low-molecular-weight starch (peak 3) decreased from 25.59 to 24.7% and then increased to 25.76%, while the content of high-molecular-weight starch (peak 1) increased from 51.45 to 53.26%, and then decreased to 52.52%. The fermentation time showed a negative correlation with the viscosity of starch, and the pasting temperature first increased, and then decreased. Natural fermentation can be used as a technical means to produce corn starch products as a result of the experiments' findings, and future experiments will detect and analyze the bacterial structure of corn fermentation broth in order to better understand the molecular mechanism of natural fermentation affecting the structure and physicochemical properties of corn starch.

The aim of this study was to investigate the effects of the dry-aging method on the sensory properties, chemical composition, and profile parameters of the texture of beef obtained from local farms. The qualitative characteristics of the beef were investigated for five samples, respectively, fresh meat, and dry-aged beef for 14, 21, 28, and 35 days, in aging rooms with controlled parameters: temperature (1 ± 1 °C), relative humidity (80 ± 5%), and air circulation speed (0.5-2 m/s). During the dry-aging period, there was a decrease in humidity by about 6.5% in the first 21 days, which allowed the concentration of fat, protein, and total collagen content. The dry-aging process considerably influenced the pH value of the meat, which, in the second part of the dry-aging process (14-35 days), increased from 5.49 to 5.66. These values favored the increase by 37.33% of the water retention capacity and the activation of the meat's own enzymes (calpain, cathepsin, collagenase). This influenced the solubilization process of proteins and collagen, thus contributing to the improvement of the texture profile. Because variations in organoleptic and physicochemical parameters occurred simultaneously during dry-aging and storage, the method of analyzing the information was applied. Mutual information on the influence of physicochemical indicators on the texture profile parameters was followed, a factor of major importance in the consumer's perception. The degree of influence of soluble proteins, sarcoplasmic and myofibrillar proteins, fats, and soluble collagen content on the texture profile parameters (hardness, cohesiveness, springiness, gumminess, and chewiness) of the dry-aged beef for 35 days was established. These investigations allowed the optimization of the beef dry-aging technological process in order to obtain a product with a sensory profile preferred by the consumer.

Objective: The work aimed to assess the safety and quality of broiler meat in experimental listeriosis changes in storage. Materials and Methods: Ross Cobb 500 chickens (40) were divided into 4 groups of 10 animals each. Chickens from three experimental groups were infected by Listeria innocua, Listeria ivanovii, and Listeria monocytogenes. Meat samples were stored for 5 days at 0°C-4°C. Meat samples were kept in the refrigerator for 3, 4, and 5 days. Microbiological and laboratory indicators of meat freshness were found on these days as well. Results: After the slaughter of chickens with experimental listeriosis, pathological changes in muscles and organs were noted against the background of fattening carcasses with a high slaughter yield. By bacterial contamination, 1 day after slaughter, the meat of chickens of the experimental groups (L. innocua, L. ivanovii, and L. monocytogenes) outperformed the control group by almost 1.9, 13.9, and 24.7 times, respectively (p < 0.05). The same trend is observed for the third, fourth, and fifth days of meat storage. To keep chicken meat fresh for 5 days, only samples from the control group stayed fresh. Conclusion: According to the total bacterial contamination, the meat of chickens of the groups L. innocua and L. ivanovii was dangerous to human health after 5 and 4 days of storage, respectively. From the first day after the chickens were killed, the meat of chickens that had been infected with L. monocytogenes did not meet the requirements (up to 100 CFU/gm) and was not safe to store or eat.

A novel method of predicting heavy metal concentration in lake water by support vector machine (SVM) model was developed, combined with low-cost, easy to obtain nutrients and physicochemical indicators as input variables. 115 surface water samples were collected from 23 sites in Chaohu Lake, China, during different hydrological periods. The particulate concentrations of heavy metals in water were much higher than the dissolved concentrations. According to Nemerow pollution index (Pi), pollution degrees by Fe, V, Mn and As ranged from heavy (2 ≤ Pi < 4) to serious (Pi ≥ 4). The concentrations of most heavy metals were the highest during the medium-water period and the lowest during the dry season. Non-metric Multidimensional Scaling Analysis confirmed heavy metal concentrations had slight spatial difference but relatively large seasonal variation. Redundancy Analysis indicated the close associations of heavy metals with nutrient and physicochemical indicators. When both nutrient and physicochemical indicators were used as input variables, the simulation effects for most elements in total and particulate were relatively better than those obtained using only nutrient or only physicochemical indicators. The simulation effects for As, Ba, Fe, Ti, V and Zn were generally good, based on their training R values of 0.847, 0.828, 0.856, 0.867, 0.817 and 0.893, respectively, as well as their test R values of 0.811, 0.836, 0.843, 0.873, 0.829 and 0.826, respectively; and meanwhile, in both the training and test stages, these metals also had relatively lower errors. The spatial distribution of heavy metals in Chaohu Lake was then predicted using the fully trained SVM models.

To investigate the effect of yeasts on Kazak cheese quality and flavor, three isolated yeasts (Kluyveromyces marxianus A2, Pichia kudriavzevii A11, and Pichia fermentans A19) were used to ferment cheeses and designated as StC, LhC, and WcC, respectively. The cheese fermented with a commercial lactic acid starter without adding yeast was used as control named LrC. The results showed that the texture of cheese added with yeasts were more brittle. K. marxianus A2 contributed to the formation of free amino acids and organic acids, especially glutamate and lactic acid. Moreover, K. marxianus A2 provides cheese with onion, oily, and floral aromas. Furthermore, P. kudriavzevii A11 promotes a strong brandy, herbaceous, and onion flavor. Although no significant aroma change was observed in PfC, it promoted the production of acetic acid, isoamyl acetate, and phenethyl acetate. These results indicate that yeasts are important auxiliary starters for cheese production.
