RESUMO

Gamma aminobutyric acid (GABA) is a non-protein amino acid that is widely distributed in nature and its physiological importance goes beyond its role as an inhibitory neurotransmitter of the central nervous system in mammals. Since microbial fermentation is one of the most promising methods to obtain GABA, the production of this metabolite by several strains of lactic acid bacteria isolated from quinoa and amaranth sourdoughs was investigated. Lactobacillus brevis CRL 2013 produced the highest GABA levels, reaching 265 mM when optimal culture conditions were set up. The fermentative profile showed that CRL 2013 was able to catabolize carbohydrates through the phosphoketolase pathway yielding variable amounts of lactic acid, acetate and ethanol, which depended on the type of carbon source available and the presence of external electron acceptors such as fructose. Enhanced growth parameters and low GABA synthesis were associated to pentose fermentation. This impairment on GABA production machinery was partially overpassed by the addition of ethanol to the culture media. These results support the potential use of L. brevis CRL 2013 as a starter culture for the manufacture of GABA-enriched functional foods and provide further insights to the understanding of the GAD system regulation in lactic acid bacteria.

The addition of different oil blends in the feed of finishing pigs was evaluated. Twenty-four castrated male finishing pigs were used in a randomized block design containing four treatments and six replicates. The treatments consisted of: Reference ration (RR) - 100% soybean oil feed; and the combination of the different oils: Blend1 - 50.0% soybean oil (SO), 25.0% flaxseed oil (FO), 12.5% olive oil (OO) and 12.5% canola oil (CO); Blend2 - 25.0% SO, 50.0% FO, 12.5% OO and 12.5% CO; and Blend3 - 25.0% SO, 12.5% FO, 12.5% OO and 50.0% CO. The performance, quantitative and qualitative carcass parameters, fatty acids profile and economic feasibility of the diets were evaluated. The use of blends in the diets did not influence the performance or carcass quality, but increased marbling and carcass yield. The fatty acid profile of the loin presented greater amounts of stearic acid in Blend3 and higher percentage of unsaturated fatty acids in animals fed with Blend1. The fatty tissue presented greater amounts of myristic acid in Blend1 and oleic acid in Blend3. The reference ration was the most economic. The Blends did not affect performance or carcass characteristics and improved the fatty acid profile.(AU)


Foi avaliada a utilização de diferentes blends de óleo em dietas de suínos em terminação. Foram utilizados 24 suínos, machos, castrados, distribuídos em delineamento de blocos ao acaso, com quatro tratamentos e seis repetições. Os tratamentos consistiram de: ração referência (RR) - 100% de ração com utilização de óleo de soja; e a combinação de diferentes óleos: Blend1 - 50,0% de óleo de soja (OS), 25,0% de óleo de linhaça (OL), 12,5% de óleo de oliva (OO) e 12,5% de óleo de canola (OC); Blend2 - 25,0% OS; 50,0% OL; 12,5% OO e 12,5% OC; e Blend3 - 25,0% OS; 12,5% OL; 12,5% OO e 50,0% OC. Foram avaliados os parâmetros de desempenho, a qualidade de carcaça, o perfil de ácidos graxos e a viabilidade econômica. O uso de blends nas dietas não influenciou o desempenho ou a qualidade da carcaça, mas aumentou o marmoreio e o rendimento de carcaça. O perfil de ácidos graxos do lombo apresentou maiores quantidades de ácido esteárico com a utilização do Blend3 e maior porcentagem de ácidos graxos insaturados nos animais alimentados com o Blend1. O tecido adiposo apresentou maiores quantidades de ácido mirístico quando se forneceu o Blend1 e de ácido oleico com o Blend3. A ração testemunha foi a mais econômica. As misturas não afetaram o desempenho e as características de carcaça e melhoraram o perfil de ácidos graxos da carne.(AU)

It has been previously shown that Lactobacillus plantarum CRL 2130 is able to produce riboflavin in soyamilk. The aim of the present study was to evaluate the efficiency of this riboflavin-bio-enriched soyamilk to revert and/or prevent the nutritional deficiency of riboflavin using different animal models. When used to supplement the diets of previously depleted animals, it was shown that the growth, riboflavin status and morphology of the small intestines reverted to normal parameters and were similar to animals supplemented with commercial riboflavin. In the prevention model, the same tendency was observed, where animals that received soyamilk fermented with L. plantarum CRL 2130 did not show signs of riboflavin deficiency. This new bio-fortified soya-based product could be used as part of normal diets to provide a more natural alternative to mandatory fortification with riboflavin for the prevention of its deficiency.

Cereal-based products can be used as vehicles for the delivery of relevant bioactive compounds since they are staple foods for most cultures throughout the world. The health promoting benefits of flavonoids and saponins contained in black bean seed coats have been previously described. In the present work, the effect of adding flavonoids and saponins from black bean seed coat to the typical yeast-leavened whole wheat bread formulation in terms of bread features, organoleptic properties and phytochemical profile was studied. The retention of bioactive compounds was determined and the inhibitory effects of in vitro enzyme digested samples on two colon cancer cell lines (Caco-2 and HT29) was evaluated. The addition of bioactive compounds did not significantly affect baking properties or texture parameters. Among organoleptic properties of enriched breads, only crumb color was affected by the addition of bioactive compounds. However, the use of whole wheat flour partially masked the effect on color. More than 90% of added flavonoids and saponins and 80% of anthocyanins were retained in bread after baking. However, saponins were reduced more than 50% after the in vitro enzyme digestion. The black bean seed coat phytochemicals recovered after in vitro enzyme digestion of enriched breads significantly reduced by 20% the viability of colon cancer cells without affecting standard fibroblast cells (p < 0.05).

A formulação do bolo de chocolate foi otimizada efetuando-se a substituição parcial da farinha de trigo por fécula de mandioca e farinha de albedo de laranja. A metodologia utilizada adotou um planejamento fatorial 23, com variáveis independentes fécula de mandioca (X), açúcar (Y) e farinha de albedo da laranja (Z) e variáveis dependentes para os atributos da análise sensorial aparência, aroma, sabor,textura e impressão global. Os bolos foram avaliados sensorialmente por 50 provadores, por meio de teste de aceitação, e intenção de compra, utilizando-se escala hedônica. Os parâmetros de otimização foram definidos por planejamento fatorial e análise gráfica de superfície de resposta. Os dados obtidos quanto a preferência, intenção de compra e resultados físico-químicos das formulações otimizada, padrão e comercial foram submetidos a análise de variância, e as médias comparadas, pelo teste de Tukey (p< 0,05). Os bolos elaborados obtiveram avaliações médias para todos os atributos sensoriais, situadas na região positiva da escala. O produto otimizado foi constituído de 7,5% de farinha de albedo, 27,5% de fécula de mandioca e 110% de açúcar. A formulação otimizada de fécula de mandioca demonstrou características físico-químicas adequadas, com melhor e maior teor de fibras. (AU)


This investigation was conducted to optimize the chocolate cake formulation by using cassava starch and flour of orange albedo as a partial substitute for wheat flour. The methodology followed the factorial design 23, including independent variables cassava starch (X), sugar (Y) and orange albedo flour (Z) and dependent sensory attributes variables appearance, aroma, flavor, texture, and overall impression. The cakes were evaluated by 50 tasters by means of acceptance testing and purchase intention by using hedonic scale. The optimization parameters were defined by factorial design and graphical analysis of surface response. Preference, purchase intention and physicochemical analyses data on optimized, standard and commercial formulations were evaluated by analysis of variance, and mean values were compared by Tukey test (p < 0.05). The formulated cakes obtained average grades for all sensory attributes, which were situated in the positive region of the scale. The optimized product showed 7.5% of orange albedo flour, 27.5% of cassava starch and 110% of sugar. The cassava starch formulation resulted in a product with adequate physical and chemical characteristics and the best and highest fiber contents. (AU)
