ABSTRACT

ABSTRACT Objective: To assess the social, metabolic, and lifestyle determinants of consumption of fruits, vegetables, and greens (FVG) and ultra-processed food (ULT) in adults from Pernambuco. Methods: Cross-sectional and analytical study, conducted in 2015/2016. In addition to sociodemographic variables, the determinants of lifestyle were level of physical activity, alcohol consumption, tobacco use, and metabolic variables were self-reported hypertension, blood glucose, and Body Mass Index (BMI). Consumption was measured by the Food Frequency Questionnaire, then created the Frequency of Consumption Index (SFI) of the mean intake of ULT and FVG foods. The indices of FVG and ULT consumption were transformed into quartiles and these variables were included in the multinomial logistic regression, considering their determinants when p<0.05. Results: The sample was representative of the state, with 1,067 people being interviewed, whose intake of ULT was higher than that of FVG in the lowest and highest quartile of the consumption index. Consumption of fruit and vegetables was higher in higher consumption of alcoholic beverages (p=0.031) and BMI>25 kg/m2 (p=0.047); and lower in the lowest income (p=0.001). ULT intake was higher in young adults (p=0.005), lower income (p=0.044), and controlled blood glucose (p=0.021). Rural areas were 52% less exposed to medium-high ULT consumption (p<0.006). Conclusion: Higher rate of ULT consumption in relation to fresh foods, with income as a common determinant, inversely associated with ULT intake and directly related to FVG, which demands structuring policies.


RESUMO Objetivo: Avaliar os determinantes sociais, metabólicos e de estilo de vida do consumo de frutas, legumes e verduras (FLV) e ultraprocessados (ULT) em adultos de Pernambuco. Métodos: Estudo transversal e analítico, realizado em 2015/2016. Além de variáveis sociodemográficas, os determinantes do estilo de vida foram nível de atividade física, doses de bebida alcoólica e uso de tabaco e os metabólicos foram hipertensão autorreferida, glicemia e Índice de Massa Corporal (IMC). O consumo foi mensurado por questionário de frequência alimentar, e, em seguida, criou-se Índice da Frequência de Consumo (IFC) da média de ingestão dos alimentos ULT e FVL. Os índices de consumo de FLV e ULT foram transformados em quartis e essas variáveis incluídas na regressão logística multinomial, considerando seus determinantes quando p<0,05. Resultados: A amostra foi representativa do estado, sendo entrevistadas 1.067 pessoas, cuja ingestão de ULT foi superior à de FVL no menor e no maior quartil do índice de consumo. O consumo de FLV foi superior no maior consumo de bebida alcoólica (p=0,031) e IMC>25 kg/m2 (p=0,047); e inferior na menor renda (p=0,001). O consumo de ULT foi maior em adultos jovens (p=0,005), menor renda (p=0,044) e glicemia controlada (p=0,021). A área rural estava 52% menos exposta ao consumo médio-alto de ULT (p<0,006). Conclusão: Maior índice de consumo de ULT em relação aos alimentos in natura, tendo a renda como um determinante comum, inversamente associada à ingestão de ULT e diretamente relacionada a FVL, o que demanda políticas estruturantes.

Resumo O estudo visa avaliar a promoção dos subgrupos de AIN/MP anunciados em encartes de supermercados, considerando as características das redes e a tipologia dos encartes. Foram analisados encartes de cinco redes de supermercados da região metropolitana do Rio de Janeiro (junho/2019-maio/2020). Foram apresentados dados de abrangência e perfil socioeconômico das redes e tipo de encarte. Dos 68.110 alimentos, 30,6% são AIN/MP. Carnes/ovos foram mais promovidos (42,3%), seguido de frutas/hortaliças (20,2%) anunciados mais em encartes de hortifruti. Laticínios; cereais/farinhas/massas e bebidas/infusões representaram cerca de 10,0% dos anúncios. Leguminosas (3,8%), especiarias e cogumelos (0,2%) e oleaginosas (0,1%) foram pouco promovidos. Foram encontradas diferenças estatisticamente significativas na promoção de subgrupos segundo abrangência e perfil socioeconômico das redes. Frutas/hortaliças foram mais anunciadas em redes nacionais e voltadas para o público de alta renda em comparação às locais e voltadas para um público de média/baixa renda. Constatou-se desequilíbrio na promoção dos subgrupos de AIN/MP, com diferenças entre as redes e os tipos de encartes. Diante disto, deve-se dar luz à discussão sobre a regulação da promoção de alimentos no varejo alimentar.


Abstract The present study evaluated the promotion of natural/minimally processed foods (N/MPF) subgroups advertised in supermarket circulars by considering supermarket features and circular typology. We analyzed circulars published by five supermarket chains in the metropolitan region of Rio de Janeiro (June/2019-May/2020) and present data on the socioeconomic coverage and profile of the supermarkets and the types of circulars. Of the 68,110 types of foods, 30.6% were N/MPF. Meat/eggs were the most promoted ones (42.3%), followed by fruits/vegetables (20.2%), which were more often advertised by produce shop circulars. Dairy products, cereals/flours/pasta and beverages/infusions made up around 10.0% of the ads. Legumes (3.8%), spices and mushrooms (0.2%) and oilseeds (0.1%) were rarely promoted. Statistically significant differences were found in the promotion of subgroups according to supermarket coverage and their socioeconomic profiles. Fruits/vegetables were more often advertised by national chains and aimed at a high-income public than by local companies and aimed at a low/middle-income public. Promotion of N/MPF subgroups was disproportional due to differences among chains and types of circulars. As a result, a discussion on the regulation of food promotion in food retail is required.

ABSTRACT

Several treatment strategies have been proposed to minimize the environmental impact of dairy wastewaters. However, their complex and variable composition makes it difficult to predict the degradation kinetics of organic compounds. In this study, we used a mathematical approach to describe the kinetics of total organic carbon degradation in real dairy wastewater by photo-Fenton oxidation. The reactions were conducted under different ultraviolet light intensities, pH, temperature and Fenton reagent concentrations, obtaining a maximum TOC removal of 90.84%. The kinetic model was developed based on well-established photo-Fenton reactions. The present approach considers that account that small and large molecules of unknown contaminants are present in the effluent, and the smaller molecules are consumed first. The specific degradation rate (kd) was considered as an exponential function of total organic carbon conversion, comprising this effect of molecular size distribution on the treatment process. Fitting of experimental data to model predictions provided mean R2 values of 0.843-0.953.

ABSTRACT

Objetivo Avaliar universitários através de questionário de frequência alimentar (quantitativo e qualitativo) e classificar a ingestão de alimentos de acordo com o tipo de processamento. Métodos Trata-se de um estudo transversal observacional, em que foi enviado um questionário para os alunos dos cursos de Nutrição, Educação Física, Enfermagem, Administração, Farmácia, Psicologia, Engenharia Civil e Fisioterapia da Instituição de Ensino Superior Universidade Salgado de Oliveira, Rio de Janeiro. Foram coletadas as seguintes informações: curso, sexo e o consumo alimentar nas refeições diárias, separadas por porções: desjejum, colação, almoço, lanche da tarde, jantar e ceia. Em seguida, os alimentos que os estudantes relataram consumir foram separados em quatro categorias: in natura; minimamente processado; processado e ultraprocessado, baseando-se nas nomenclaturas do Guia Alimentar Brasileiro. Resultados Foram coletados dados de 201 alunos, o equivalentes a 5% dos alunos matriculados nos cursos de Nutrição, Educação Física, Enfermagem, Administração, Farmácia, Psicologia, Engenharia Civil e Fisioterapia da Universidade Salgado de Oliveira. Observou-se um alto consumo de alimentos processados na amostra como um todo, porém de forma mais expressiva pelos alunos do curso de Engenharia Civil. Em contrapartida, o maior consumo de alimentos in natura e minimamente processados foi declarado pelos alunos do curso de Educação Física. Conclusão As análises mostraram que o consumo alimentar dos alunos do curso de Educação Física era mais saudável em termos de processamento, possivelmente devido ao cuidado maior desses alunos com a saúde física. Já os alunos do curso de Engenharia Civil consumiam mais alimentos ultraprocessados. O consumo prolongado de alimentos ultraprocessados e processados aumenta o risco de desenvolvimento de doenças crônicas não transmissíveis, levando a um maior risco de mortalidade em longo prazo.


Objective To evaluate university students with a food frequency questionnaire (quantitative and qualitative), and classify the intake according to food processing. Methods This is a cross-sectional observational study, in which a questionnaire was sent to students from the following undergraduate courses: Nutrition, Physical Education, Nursing, Business Management, Pharmacy, Psychology, Civil Engineering and Physiotherapy of the Higher Education Institution at Salgado de Oliveira University, in Rio de Janeiro. The following information was collected: the undergraduate course, gender and food consumption separated by portions in daily meals: breakfast, mid-morning snack, lunch, afternoon snack, dinner and supper. Then, the foods were separated into four categories: fresh; minimally processed; processed; ultra-processed, based on the nomenclatures of the "Brazilian Food's Guide". Results The data were collected from 201 students, equivalent to 5% of the courses in Nutrition, Physical Education, Nursing, Business Management, Pharmacy, Psychology, Civil Engineering and Physiotherapy at Salgado de Oliveira University. It was observed a higher consumption of processed foods in the sample as a whole, however, the highest intake was in the Civil Engineering Course. On the other hand, the highest consumption of fresh and minimally processed foods was found in Physical Education Course students. Conclusion The analyzes showed that food consumption of Physical Education students proved to be healthier in terms of processing, possibly due to the greater care with the physical health of these students, while the students of Civil Engineering course consumed a worrisome diet with more ultra-processed and less fresh foods. The prolonged consumption of ultra-processed and processed foods increases the risk of developing chronic non-communicable diseases, worsening the population's quality of life, leading to a higher risk of long-term mortality.

ABSTRACT

The phenotypic variation of vegetative organs and reproductive organs of newly synthesized and natural Arabidopsis kamchatica genotypes was investigated in both a controlled environment and a natural environment in an experimental garden. When we compared the variation of their leaf shape as a vegetative organ, the synthetic A. kamchatica individuals grown in the garden showed larger variation compared with the individuals incubated in a growth chamber, suggesting enhanced phenotypic variation in a natural fluctuating environment. In contrast, the natural A. kamchatica genotypes did not show significant change in variation by growth condition. The phenotypic variation of floral organs by growth condition was much smaller in both synthetic and natural A. kamchatica genotypes, and the difference in variation width between the growth chamber and the garden was not significant in each genotype as well as among genotypes. The higher phenotypic variation in synthetic leaf may imply flexible transcriptomic regulation of a newly synthesized polyploid compared with a natural polyploid.

ABSTRACT

Pathogenic and deteriorating bacteria are a great concern to food safety. In this sense, the present study evaluated the fight against microbial contamination through the use of nanoparticles containing curcumin, in addition to analyzing the physical properties of these nanoparticles. Efficient curcumin encapsulation was determined by Fourier transform infrared spectra evaluation and differential scanning calorimetry. Transmission electron microscopy images showed irregular shaped nanoparticles with broad size distribution (20-250 nm). The antibacterial activity was considered satisfactory, since curcumin in the form of nanoparticles demonstrated antimicrobial and antibacterial activity superior to curcumin in its free form, against both pathogenic bacteria, such as Staphylococcus aureus (MIC 125 µg/mL), and deteriorates, such as Alicyclobacillus acidoterrestris (MIC 62.5 µg/mL). Since curcumin nanoparticles may be consumed as a food additive, the bioactive properties of the nanoencapsulated curcumin were also evaluated in relation to antioxidant capacity (Thiobarbituric acid reactive substances (TBARS) and oxidative hemolysis inhibition assays) and cytotoxicity against four carcinoma cell lines, as well as two non-tumor cells. As a proof of concept, nanoparticles were incorporated in orange juice, with the juice maintaining satisfactory pH, °Brix, and color stability, during three days of storage (8 °C).

ABSTRACT

Escherichia coli diarreiogênica (DEC) é um importante agente de infecções gastrointestinais transmitidas pela água. O trabalho teve como objetivo avaliar a qualidade microbiológica e físicoquímica de 58 amostras de água subterrânea in natura para consumo de um assentamento rural e caracterizar os isolados de E. coli, genotipicamente dentro dos patotipos de DEC, pela técnica da PCR, e fenotipicamente. Todas as amostras apresentaram contaminação por coliformes totais e 36 (62,1%) por E. coli. Em células HEp-2, dos 170 isolados de E. coli, 106 (62,36%) apresentaram AA, 15 (8,82%) AD, 17 (10%) adesão não caracterizado e 32 (18,82%) foram não aderentes. Quanto à formação de biofilme, 126 (74,12%) cepas são formadoras, e 44 (25,88%) não formaram biofilme. Foram identificadas DEC em 6,89% das amostras de água: três (5,17%) ETEC e uma (1,72%) EAEC. EAEC apresentou AA e as três cepas de ETEC apresentaram AD, AA e não definida. Todas as DEC foram formadoras de biofilme. Dois isolados de ETEC apresentaram resistência à ampicilina e tetraciclina, uma ETEC à aminoglicosídeos, e EAEC foi sensível a todos os antibióticos testados. As ETEC foram classificadas no filogrupo B1 e a EAEC no E. Os sorotipos encontrados foram: O24:H21, OR:H21, O17:H46 e O6:H12. Todas as amostras estavam dentro dos parâmetros normais de flúor e 13 (22,4%) apresentaram resultados acima do padrão permitido de turbidez. A presença de E. coli e DEC nas amostras de água indica a necessidade de adoção de medidas que evitem a contaminação da água fornecida à população, evitando, assim, a transmissão de doenças.(AU)


Diarrheogenic Escherichia coli (DEC) is an important agent of waterborne gastrointestinal infections. The objective of this work was to evaluate the microbiological and physico-chemical quality of 58 freshwater groundwater samples for the consumption of a rural settlement and to characterize the E. coli isolates, genotyped within the DEC pathophyses, by the PCR technique, and phenotypically. All water samples presented contamination with total coliforms, and 36 (62.1%) with E. coli. In HEp-2 cells, of 170 E. coli isolates, 106 (62.36%) showed AA, 15 (8.82%) AD, 17 (10%) noncharacterized adhesion and 32 (18.82%) were non-adherent. As for biofilm formation, 126 (74.12%) strains are forming, and 44 (25.88%) did not form biofilm. DEC was identified in 6.89% of the water samples with E. coli: three (5.17%) with enterotoxigenic E. coli (ETEC), and one (1.72%) with enteroaggregative E. coli (EAEC). EAEC showed aggregative adherence, whereas various ETEC strains presented diffuse, aggregative, and non-defined adherence. All DEC strains were biofilm forming. Two isolates of ETEC showed resistance to ampicillin and tetracycline, and one isolate showed resistance to aminoglycosides. The EAEC isolate was sensitive to all antibiotics tested. All ETECs were classified into phylogenetic B1 and EAEC in E. The serotypes identified in our study were: O24:H21, ONT:H21, O17:H46, and O6:H12. All water samples were within normal fluorine parameters; however, measured turbidity was above the permitted standard in 13 (22.4%) samples. The presence of E. coli and DEC in water samples indicates the need to take action to prevent contamination of water resources accessed by people to prevent the transmission of diseases.(AU)

ABSTRACT

Recently, increasing attempts have been made to understand how plant genes function in natura. In this context, transcriptional profiles represent plant physiological status in response to environmental stimuli. Herein, we combined high-throughput RNA-Seq with insect survey data on 19 accessions of Arabidopsis thaliana grown at a field site in Switzerland. We found that genes with the gene ontology (GO) annotations of "glucosinolate biosynthetic process" and "response to insects" were most significantly enriched, and the expression of these genes was highly variable among plant accessions. Nearly half of the total expression variation in the glucosinolate biosynthetic genes (AOPs, ESM1, ESP, and TGG1) was explained by among-accession variation. Of these genes, the expression level of AOP3 differed among Col-0 accession individuals depending on the abundance of the mustard aphid (Lipaphis erysimi). We also found that the expression of the major cis-jasmone activated gene CYP81D11 was positively correlated with the number of flea beetles (Phyllotreta striolata and Phyllotreta atra). Combined with the field RNA-Seq data, bioassays confirmed that AOP3 was up-regulated in response to attack by mustard aphids. The combined results from RNA-Seq and our ecological survey illustrate the feasibility of using field transcriptomics to detect an inducible defense, providing a first step towards an in natura understanding of biotic interactions involving phenotypic plasticity.

BACKGROUND: Genetic variation in plants alters insect abundance and community structure in the field; however, little is known about the importance of a single gene among diverse plant genotypes. In this context, Arabidopsis trichomes provide an excellent system to discern the roles of natural variation and a key gene, GLABRA1, in shaping insect communities. In this study, we transplanted two independent glabrous mutants (gl1-1 and gl1-2) and 17 natural accessions of Arabidopsis thaliana to two localities in Switzerland and Japan. RESULTS: Fifteen insect species inhabited the plant accessions, with the insect community composition significantly attributed to variations among plant accessions. The total abundance of leaf-chewing herbivores was negatively correlated with trichome density at both field sites, while glucosinolates had variable effects on leaf chewers between the sites. Interestingly, there was a parallel tendency for the abundance of leaf chewers to be higher on gl1-1 and gl1-2 than on their different parental accessions, Ler-1 and Col-0, respectively. Furthermore, the loss of function in the GLABRA1 gene significantly decreased the resistance of plants to the two predominant chewers; flea beetles and turnip sawflies. CONCLUSIONS: Overall, our results indicate that insect community composition significantly varies among A. thaliana accessions across two distant field sites, with GLABRA1 playing a key role in altering the abundance of leaf-chewing herbivores. Given that such a trichome variation is widely observed in Brassicaceae plants, the present study exemplifies the community-wide effect of a single plant gene on crucifer-feeding insects in the field.

ABSTRACT

The majority of organismal phenomena show functional significance in the context of natural environments. However, we know little about how dynamic gene expression is controlled under natural complex conditions. One of the most attractive challenges in current biology is to understand organismal functions in natural environments. We established and have developed long-term "in natura" study sites of Arabidopsis halleri to evaluate precise control of gene expression in natural environments. At the sites, we monitored meteorological factors, recorded plant growth and phenology, and collected RNA and chromatin samples to investigate dynamics of transcription and epigenetic modifications. Here, we introduce the in natura study sites, especially with the emphasis on methodologies for setting up study sites in natural plant populations and collecting samples used in transcriptomics and epigenetics in natural environments. Although the methods introduced here need to be modified depending on situations of one's study systems, our case can be a model for planning new in natura studies.

In the Teles Pires River watershed, one of the most common techniques currently used by fishermen to catch fish is to provide a food supplement commonly known as "cevas". The purpose of this study was to compare the chemical composition of fillets from Brycon falcatus that were caught in both the presence and absence of cevas. The fish were sampled monthly and captured in the following conditions: the Tapaiúna River without cevas, the Teles Pires River with one ceva /100 m, the Celeste River with one ceva/500 m, the Verde River with one ceva/1000 m and the Cristalino River (control area). Subsequent to capture, the fish were euthanized and preserved on ice to determine their water, ash, crude protein and fat contents. Fillets of fish from the control area exhibited a lower level of crude protein (17.81%) compared with that of fish from the other rivers, which did not differ amongst one other. The fillets of fish from the river with the greatest density of cevas (1/100 m) exhibited a higher fat content (3.63%) than that of fish from the control area (1.51%). Thus, the cevas changed the chemical composition of B. falcatus fillets.


Atualmente, na bacia do rio Teles Pires, uma das técnicas mais utilizadas pelos pescadores para captura de peixes é a oferta de suplemento alimentar, popularmente conhecida como ceva. Objetivou-se comparar a composição química do filé de Brycon falcatus de locais com oferta de suplemento alimentar (cevas) e sem cevas. As coletas dos peixes foram mensais e as capturas foram em rio Tapaiúna sem cevas, rio Teles Pires com uma ceva/100 m, rio Celeste com uma ceva/500 m, rio Verde com uma ceva/1.000 m e rio Cristalino em Unidade de Conservação (controle). Após as capturas, os peixes foram eutanasiados e acondicionados em gelo, para determinação dos teores de umidade, cinzas, proteína bruta e gordura. Os filés dos peixes oriundos da área controle apresentaram o menor teor de proteína bruta (17,81%) que dos outros rios, que não diferiam entre si. Os filés dos peixes do rio com maior densidade de cevas (1/100 m) apresentaram maior teor de gordura (3,63%) que do rio em Unidade de Conservação (1,51%), mas não diferiram dos outros rios. As cevas de soja in natura alteraram a composição química dos filés de Brycon falcatus.

ABSTRACT: This study aimed to evaluate the inbreeding depression and average genetic components in seven hybrids and two open pollinated cultivars for green corn production, as well as to select the best genotypes in order to obtain base populations for inbred lines extraction. The experiment was carried out in a randomized complete block design with four replications, in a split plot design, with inbreeding levels arranged in the plots and the different genotypes distributed over the subplots, in the municipality of Sabáudia - PR, during the 2014/15 crop season. Higher values of dominance and inbreeding depression were observed for yield of both unhusked and commercial ears. Higher additive effects were detected on length and diameter of commercial ears. The genotypes AM811, Cativerde 02 and AG4051 showed greater probability of obtaining highly productive and higher quality green corn inbred lines.


RESUMO: O trabalho teve por objetivo avaliar a depressão por endogamia e os componentes genéticos de médias em sete híbridos e em duas variedades de polinização aberta para uso como milho verde, para seleção de genótipos visando à formação de populações-base para a extração de linhagens. Para a realização do estudo, foi instalado um experimento no município de Sabáudia - PR, no ano agrícola de 2014/15. O experimento foi delineado em blocos completos ao acaso, com quatro repetições, em arranjo de parcelas subdivididas, com as gerações de endogamia e os diferentes genótipos ocupando as parcelas e as subparcelas, respectivamente. As maiores estimativas de dominância e de depressão endogâmica foram observadas na produtividade de espigas empalhadas e comerciais. Os efeitos aditivos foram mais expressivos na herança do comprimento e do diâmetro de espigas comerciais. Os genótipos AM811, Cativerde 02 e AG4051 apresentaram maiores probabilidades no sucesso de extração de linhagens destinadas à produtividade e qualidade de milho verde.

ABSTRACT

Phenology refers to the study of seasonal schedules of organisms. Molecular phenology is defined here as the study of the seasonal patterns of organisms captured by molecular biology techniques. The history of molecular phenology is reviewed briefly in relation to advances in the quantification technology of gene expression. High-resolution molecular phenology (HMP) data have enabled us to study phenology with an approach of in natura systems biology. I review recent analyses of FLOWERING LOCUS C (FLC), a temperature-responsive repressor of flowering, along the six steps in the typical flow of in natura systems biology. The extensive studies of the regulation of FLC have made this example a successful case in which a comprehensive understanding of gene functions has been progressing. The FLC-mediated long-term memory of past temperatures creates time lags with other seasonal signals, such as photoperiod and short-term temperature. Major signals that control flowering time have a phase lag between them under natural conditions, and hypothetical phase lag calendars are proposed as mechanisms of season detection in plants. Transcriptomic HMP brings a novel strategy to the study of molecular phenology, because it provides a comprehensive representation of plant functions. I discuss future perspectives of molecular phenology from the standpoints of molecular biology, evolutionary biology and ecology.

Os objetivos deste trabalho foram estabelecer os índices de consumo de leite cru relacionando com o contexto do comércio e consumo de leite cru nos municípios de Petrolina, PE e Juazeiro, BA, e, como atividade de extensão, realizar orientação à população destes municípios com relação ao risco do consumo deste alimento. Foram entrevistadas e orientadas pessoas de 583 residências no município de Petrolina, PE e 534 residências no município de Juazeiro, BA. As entrevistas foram feitas diretamente ao consumidor através de uma pesquisa descritiva e um questionário composto por 31 questões. Observou-se que o consumo de leite cru no município de Petrolina, PE é maior que o de Juazeiro, BA. As ações de orientação foram mais intensas em Petrolina, PE, devido ao maior consumo de leite cru.


Our objectives were to establish the rates of consumption of raw milk relating to the context of trade and consumption of raw milk in the cities of Petrolina, PE and Juazeiro, BA, and as an extension activity, conduct orientation for the population of these municipalities with respect the risk of consumption of this food. We surveyed 583 households, and oriented in the city of Petrolina, PE and a 534 residences in the city of Juazeiro, BA. The interviews were made directly to the consumer through a descriptive and a questionnaire consisting of 31 questions. It was observed that the consumption of raw milk in the city of Petrolina, PE is greater than that of Juazeiro, BA. The action orientations were more intense in Petrolina, PE, due to greater consumption of raw milk.

O crescente interesse da população pela promoção da saúde vem despertando a atenção dos consumidores por alimentos ricos em antioxidantes, combinado com a praticidade do consumo de sucos de frutos processados. O presente trabalho objetivou quantificar e avaliar a capacidade antioxidante de compostos fenólicos e ácido ascórbico em frutas in natura e polpas congeladas. As frutas in natura e polpas congeladas obtidas na região de Lavras - MG foram submetidas à quantificação de compostos fenólicos e ácido ascórbico e os respectivos extratos acetônico-etanólico e acetônico-metanólico. Foram determinadas suas atividades antioxidantes pelos métodos radicalares DPPH e ABTS. O extrato acetônico-metanólico foi mais efetivo para extrair os compostos antioxidantes das amostras. Apenas as polpas congeladas de acerola apresentaram uma redução do teor de compostos fenólicos em relação ao fruto. Para o teor de ácido ascórbico, houve uma redução nas polpas congeladas de acerola e goiaba. As amostras de acerola apresentaram os maiores teores de compostos fenólicos, ácido ascórbico e atividade antioxidante em relação aos demais frutos analisados.


The growing public interest in health- promotion, has called the attention of consumers for foods rich in antioxidants, combined with the practicality of the consumption of processed fruit juices. Therefore, this study aimed to quantify and evaluate the antioxidant capacity of phenolic compounds and ascorbic acid in fruits "in natura" and frozen pulps. The fruits "in natura" and frozen pulps from region of Lavras-MG, underwent quantification of phenolic compounds, ascorbic acid and the corresponding extracts acetonic-ethanolic and acetonic-methanolic. Their antioxidant activities were evaluated by DPPH and ABTS radical methods. The extract acetonic-methanolic was more effective to extract the antioxidant compounds from samples. Only frozen acerola pulps showed lower content of phenolic compounds in relation to fruit. For ascorbic acid, there was a reduction in the frozen pulp of acerola and guava. Acerola samples showed higher content of phenolic compounds, ascorbic acid and antioxidant activity compared to other fruits analyzed.

Foi avaliada a qualidade da carne bovina in natura comercializada em supermercados. Vinte estabelecimentos cadastrados na Vigilância Sanitária Municipal foram avaliados aplicando-se check list baseado na legislação brasileira. Foram realizadas as contagens de micro-organismos indicadores nas amostras de carne e naquelas coletadas das mãos de manipuladores e da bancada pela técnica de contagem rápida por placas Petrifilm® (3M Company) em oito estabelecimentos. Todos os estabelecimentos analisados estavam em desacordo com a legislação; em 55%, as carnes estavam estocadas em temperatura acima do limite (7 °C) recomendado. Foram detectadas bactérias entre 1,0 × 102 e 3,1 × 104 UFC/g e 2,0 ×10 UFC/g, respectivamente, para coliformes totais e Escherichia coli nas carnes, e entre 2,0 × 10 e 3,7 × 104UFC/cm2 para coliformes totais e < 10 a 7,0 × 10 UFC/cm2 para Escherichia coli nas amostras de bancada. Nos materiais das mãos, as bactérias variaram entre 6,0 × 102 e 2,9 × 104 UFC/mão e de < 10 a 2,8 × 103UFC/mão, respectivamente, para Staphylococcus aureus e coliformes totais. Em todos os estabelecimentos,houve falhas nas Boas Práticas de Fabricação, que induziram a exposição do produto a contaminação microbiológica e comprometimento da qualidade do alimento.

Neste trabalho foram avaliadas as mudanças físico-químicas provocadas pelo tipo de armazenamento do suco de abacaxi 'Pérola', durante de 48 horas após sua elaboração. Foram avaliadas 4 condições de armazenamento, em ambiente refrigerado (4 ±1º C) e em temperatura ambiente (22 ±1º C), ambas com e sem luminosidade. O experimento foi conduzido em delineamento inteiramente casualizado, com os tratamentos dispostos em esquema fatorial 2 x 2 x 6, sendo 2 ambientes de luminosidade (presença e ausência), 2 condições de temperatura (refrigeração e ambiente) e 6 tempos de amostragem (0, 6, 12, 24, 36 e 48 horas) com 3 repetições. Foram analisados, pH, acidez titulável, sólidos solúveis, vitamina C total e cor utilizando-se as variáveis claridade (L*), ângulo de cor (hº) e cromaticidade (C*). O tempo de armazenamento apresentou influência negativa na qualidade do suco provocando a diminuição dos teores de ácido ascórbico e ácido cítrico, alterações na cor, principalmente o escurecimento. Entretanto, quando armazenado em ambiente refrigerado e sem luz, o suco conservou suas características iniciais por mais tempo, sendo estas melhor preservadas pelas baixas temperaturas.


In this work, psycho-chemical changes caused by the storage of homemade 'Pérola' pineapple juice, over 48 hours after its preparation were evaluated. Four storage conditions were evaluated in a refrigerated environment (4 ±1º C) and in room temperature (22 ±1º C) both in the presence and abscence of light. The experiment was conducted with a totally random design, with treatments arranged in a factorial 2 x 2 x 6, with 2 light conditions (presence and absence), 2 temperature conditions (cooling and room temperature) and 6 sampling times (0, 6, 12, 24, 36 and 48 hours) with three replicates. pH, titratable acidity, soluble solids, total vitamin C and color using the variables: luminosity (L*), hue angle (hº) and chromaticity (C*) were analyzed. The period of storage presented a negative influence on the pineapple juice, causing a reduction of ascorbic and citric acid contents and color changes, mainly darkening. However, when stored in refrigerated environment in the abscence of light, the juice conserved its initial features for a longer time, which were better preserved by low temperatures.
